Vanilla Sky Cupcakes
Chocolate mint cupcakes- Altered by me :)
A moist and delicious chocolate cupcake topped with a peppermint flavored butter cream icing and a delicate mint infused chocolate heart to finish it off.
The cupcake
Ingredients:
¾ cup plain flour
¼ cup cocoa
½ cup caster sugar
2 teaspoons baking powder
½ teaspoon vanilla or vanilla essence
80 g butter
2 eggs
½ cup milk
Method:
1. Preheat oven to 160°C. Prepare 12 hole muffin tray or 24 hole mini muffin tray.
2. Sift all dry ingredients into a mixing bowl.
3. Make a small well in the middle of the bowl and then add remaining ingredients.
4. Beat on low speed with electric mixer until just combined.
5. Scrape down sides of bowl and beat on medium speed for a further two minutes.
6. Place tablespoons of the mixture into 12 hole muffin tray until holes are half full. Heaped
teaspoon of mixture for mini muffins.
7. Place tray into oven for 15-18 minutes for 12 hole muffin pan or 10-12 minutes for mini
muffin pan.
8. Stand for 5 minutes and then turn out onto wire rack to cool.
The icing
Ingredients:
3 cups powdered sugar
1/3 cup butter or margarine, softened
1/2 teaspoons vanilla
1/2 teaspoon peppermint essence
3 tablespoons cream (its said milk but I used cream to make it fluffier and thicker)
Method:
1. Beat the butter until very light and creamy
2. Little by little, add the powdered sugar beat after each addition on low speed.
3. Stir in vanilla, peppermint, and enough of the cream until smooth and spreadable.
4. Colour with food-dye and mix to combine
5. spoon into piping bag and pipe icing onto cooled cupcakes
Chocolate decorations
Ingredients:
100g dark chocolate
1/2 teaspoon peppermint essence
Method:
1. Break the chocolate into small pieces and place in a glass or metal bowel over a pan of near boiling water. (double boiler)
2. stir until melted then take off heat and add the peppermint essence.
3. Pour into piping back and cut a small amount of the tip off.
4. Pipe desired shapes onto a sheet of baking paper and place in freezer or fridge
5. once hardened, place decorations onto cupcakes, and they are ready to eat!
