Do's and Don'ts
Do- Keep a lid over cold food, keep cold foods away from any sources that can raise the temperature into the danger zone
Don't- Stack food over the top of a refrigeration unit, allow food to reach over 41°F
Proper Techniques To Ensure Safety
You have 2 hours to get food below 41°F or you must reheat it.
If food is being held by ice there must be enough ice to last for the day and the ice must be change every 24 hours.
