CCA Chapel
In June, several members of FBC of Lowry City (Mrs. Hyke, Hadley, Mayme, Clara, Pastor Jeff Ferguson and CCA student Maggie) traveled over 1,000 miles to minister to the folks of Bulloch County as part of their "Mission: Georgia" outreach. While there, they visited a food pantry, went to church, stayed in cabins, put together chairs for a conference room, installed a refrigerator, cleaned out a tool shed and organized a warehouse. After working, they did get to have some fun at the ocean and playing on a big water slide.
July 2019 was the first time FBC sent members to Georgia. They roofed a cabin and had a 25 cent sale to get rid of items in the warehouse and to raise money. Members go on long mission trips every other year, so on the in-between years they do things locally, such as: painting houses, building decks, cleaning up people's yards, and they help Baptist Ridge Camp.
Mrs. Hyke's father helps with Christian Social Ministries, where he has the opportunity to love on people like God intended us to do. He encourages all CCA students to get involved with helping out our community with a food pantry or Samaritan center. He said, "God honors our efforts and makes things available when you're working to glorify Him."

Principal Spotlight: Becky Hyke
Mrs. Hyke grew up in Lowry City, Missouri. She attended Missouri State University and Georgia Southern University as her Undergraduate, then the University of Central Missouri as her Graduate. She is married to Nathan Hyke and they have three children: Clara, Hadley, and Mayme. She also has a morkie named Diesel.
She is the 7th-12th grade Upperschool principal and she teaches 6th grade science. Her favorite Bible verse is Proverbs 3:5-6, "Trust in the LORD with all thine heart, and lean not unto thine own understanding. (6)In all thy ways acknowledge him, and he shall direct thy paths." She enjoys spending time outdoors as well as playing sports with her family and friends. In high school, she played Volleyball, Basketball, and Softball. Mrs. Hyke looks up to her mom, dad, and her in-laws.

Pumpkin Roll Recipe
PUMPKIN CAKE INGREDIENTS:
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons pumpkin pie spice (*or see below for substitution)
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 2/3 cup pumpkin puree
- optional: powdered sugar (to sprinkle on at the end!)
CREAM CHEESE FILLING INGREDIENTS:
- 1 (8 ounce) brick cream cheese, room temperature
- 1 cup powdered sugar, sifted
- 6 tablespoons butter, softened
- 1 teaspoon vanilla extract
- Preheat oven to 375° F. Line a 15 x 10-inch jelly roll pan with parchment paper, leaving an extra 1-inch of parchment sticking up on both 15-inch sides of the pan so that you can easily lift the cake out after baking. (If you’d like the parchment to stick to the bottom of the pan more easily, sprinkle a little bit of water on the pan and then press the parchment paper on top of it. You can also lightly mist the top of the parchment paper with cooking spray for easier cake release afterwards, although it’s not required.)
- Whisk together flour, baking powder, baking soda, pumpkin pie spice and salt in a large mixing bowl until combined.
- In a separate bowl, whisk eggs and granulated sugar for 1 minute until thick. Add in the vanilla and pumpkin, and whisk until just combined. Fold in the flour mixture with a rubber spatula, and stir together until just combined.
- Spread the batter evenly into prepared pan. Bake for 13 to 15 minutes, or until top of cake springs back when touched. Carefully lift the parchment paper and cake out onto a flat (and heat-safe) surface. Then slowly, use your hands to roll the cake — rolling from the short end to the short end — until it is completely rolled up. Transfer the cake roll to a wire rack, and cool until it reaches room temperature.
- While the cake is cooling, make the cream cheese filling (see below).
- Once the cake has reached room temperature, transfer the cake roll to a flat surface, and carefully it until it is flat again (or mostly flat, it’s ok if the ends curl up a bit). Spread the cream cheese mixture evenly over cake, leaving a 3/4-inch border on all sides. Then carefully re-roll the cake, gently peeling away the parchment paper as you roll until you can completely remove and discard it. Tightly wrap the pumpkin roll in plastic wrap and refrigerate at least one hour.
- Remove and unwrap the pumpkin roll and transfer it to your serving dish. Lightly dust the pumpkin roll on all sides with powdered sugar, if you would like. Then slice* and serve.
- If you have leftovers, just re-wrap the pumpkin roll in plastic wrap and store in the refrigerator for up to 5 days. Or freeze for up to 3 months.
- Whisk together cream cheese, powdered sugar, butter and vanilla extract in a mixing bowl until smooth. If the filling is too thin, add more powdered sugar. If it is too thick, add a half teaspoon or two of water. (You want a medium consistency so that the filling is easy to spread, but not too warm or thin that it will ooze out of the cake when you’re rolling it up.)
TO MAKE THE CREAM CHEESE FILLING:
Snickerdoodle Recipe:
- 1 ½ cups of Sugar.
- 1 cup of Butter.
- 2 large eggs.
- 2 teaspoons of Vanilla Extract
- 2 ¾ cups of Flour.
- 2 teaspoons of Cream.
- 1 teaspoon of Baking Soda.
- ¼ teaspoon of Salt.
Cinnamon-Sugar Mixture:
- ¼ cup Sugar
- 1 ½ Tablespoons Cinnamon
Preheat oven to 350 degrees.
In a large mixing bowl, cream butter and sugar for 4-5 minutes until light and fluffy. Scrape the sides of the bowl and add the eggs and vanilla. Cream for 1-2 minutes longer.
Stir in flour, baking soda, and salt, just until combined.
In a small bowl, stir together sugar and cinnamon.
If time allows, wrap the dough and let refrigerate for 20-30 minutes. Roll into small balls until round and smooth. Drop into the cinnamon-sugar mixture and coat well. Using a spoon, coat for a second time, ensuring the cookie balls are completely covered. *To make flatter snickerdoodles, press down in the center of the ball before placing in the oven. This helps to keep them from puffing up in the middle. *
Place on a parchment paper-lined baking sheet. Bake for 9-11 minutes. Let cool for several minutes on baking sheet before removing from the pan.
