Lemon-Garlic Crusted Chicken

Delicious lemon-garlic crusted chicken recipe!

8 chicken legs (thighs and legs attached)
1/2 cup minced garlic
1/2 cup fresh lemon juice
1 teaspoon grated lemon rind
1/4 cup extra virgin olive oil
2 1/2 tablespoons dried oregano
1/2 - 1 teaspoon sea salt (to your taste)
2 tablespoons coarsely ground black pepper
1/4 cup chopped Italian (flat-leaf) parsley
parsley sprigs for garnish


Rinse and pat-dry chicken. Discard lumps of fat. Place legs, cut side down, in a single layer in a 12- by 17-inch baking pan. In a small bowl, mix garlic, lemon juice, rind, olive oil, oregano, salt and pepper. Smear garlic mixture evenly over chicken.

Bake in a 375 degree oven until skin is well browned, about 1 1/2 hours. After 45 minutes, baste with pan juices every 15 minutes. Remove chicken to a warm platter. Skim and discard fat from drippings. Add 1/2 cup boiling water to pan. Stir to loosen browned bits. Pour sauce into a serving bowl. Scatter chopped parsley over chicken; garnish with parsley sprigs. Makes 8 servings
