Chocolate Chip Cookies

This recipe can be used to make muffins!
2 ¼ cups almond flour
1 1/2 teaspoon pumpkin pie spice (or more to taste)
1 ½ teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon unrefined sea salt
3/4 cup raw honey
1 – 2 tsp coconut oil, liquefied (optional, or equal amount of extra virgin olive oil)
1 cup pumpkin purée
1 large organic egg
1 cup raw pecans, chopped
1 cup 70% dark cocoa chocolate chips
Heat oven to 350°F. Grease or line baking sheets with parchment paper.
In a large bowl, add dry ingredients and stir with wooden spoon. Add in other ingredients and mix until incorporated. Drop tablespoons of dough onto prepared baking sheets, leaving about 1 inch between them. Bake about 13 minutes or until somewhat firm to the touch and light brown. Cool on pan 5 minutes, then enjoy!
Makes about 3 dozen cookies.
