Enchiladas

What are they?
An enchilada is a corn tortilla rolled around a filling and covered with a chili pepper sauce. Enchiladas can be filled with a variety of ingredients, including meat, cheese, beans, potatoes, vegetables, seafood or combinations. You can fill it with anything else but those are the main things in it.
Where did they come from?
Enchiladas originated in Mexico where they practiced rolling tortillas around other food dates back at least to Maya times.

Chicken is one ingredient filled inside the enchiladas
How do you cook them?
You put a spoonful of 1/4 cup of chicken mixture in each tortilla. Fold over filling, place each enchiladas in a pan with seam side down. Top with enchilada sauce and cheese. Bake in the oven for 15 minutes.
