Referral Contest

August Recipe- Anytime Tomato Salad

If you are lucky enough to be growing tomatoes this year, you should have tons becoming ripe about now. There are an abundance of vitamins and minerals in tomatoes, such as Vitamins A, B, C, and potassium. But, there is only so many times you can have them on a plain old salad. This vamped up salad recipe is sure to be as big of a hit in your home as it is in mine. Once again the recipe comes from Marlene Koch at www.marlenekoch.com.

Makes 4 Servings


¼ cup apple cider vinegar
1 tablespoon brown sugar
1 tablespoon canola oil
½ teaspoon salt
¾ cup red onion, thinly sliced
3 medium tomatoes (about 1 pound)
1 small cucumber
Fresh ground black pepper to taste


1. In a medium bowl, whisk together the vinegar, sugar, oil and salt. Add the onions and let stand for 10 minutes.

2. Cut the tomatoes into wedges, and the cucumber into thin slices (I leave on the peel), and add them to the onion mixture. Gently stir to combine. Serve with fresh ground pepper to taste.

Equipment Spotlight

99% of patients that come into the office have issues that can be effected by posture. There is a piece of equipment that everyone should have at home, a foam roller! There are many types of foam rollers available, but most do not need the expensive, fancy ones. A plain, high density, 12 inch full round roller will work. They are available on Amazon or even in your local stores, such as Target. Foam rollers can be used for neck pain, low back pain, leg pain and more. Ask at your next appointment how to use one!
