Pavlova are named for famed Russian ballerina Anna Pavlova
The dessert originates in New Zealand, and was created there to honor her visit in the 1920s.
What's it like?
The pavlova has a crisp and crunchy outer shell, and a soft, moist marshmallow-like centre, in contrast to meringue which is usually solid throughout. It is also usually covered in whipped cream and fresh fruit.
