Skitch
Skitch is a simple to use image markup tool. With Skitch you can snap a picture then add arrows, text, shapes, etc. quickly to the image and export it for use in any number of other apps. This program is available for mobile devices and for computers (Windows/Mac) which makes if a very flexible tool. If you are an Evernote user Skitch interfaces seamlessly with this product.

Final Thoughts
I use this app every week. I primarily use it to illustrate screenshots for tutorials but I really think the uses are almost endless. It's a limited app but those limitations are what makes it so easy to use and therefore easy for your students to use. The output can be incorporated into almost any other software application that will accept and image. I also have it loaded on my iPad and my laptop.
