Serves 6.
You will need:
4 egg whites
3 egg yolks
a pinch of salt
150g chocolate
2 tbs cream
1 tb caster sugar
Method:
In a heatproof bowl, break the chocolate, and add the cream. Put this over a double-boiler until melted and combined. When melted, set aside to cool for 5 minutes. In a clean, dry bowl, whisk the egg whites and salt until you have soft peaks form. Slowly add the sugar and beat until stiff peaks form. When the chocolate mixture is cool, add the egg yolks and whisk well. The chocolate mixture should become glossy. Gently fold a quarter of the egg whites in to the chocolate, being careful not to deflate the air bubbles. Then add the rest of the egg whites, and fold until well combined. Pour into serving glasses and put it into the fridge for 2 hours until set.
This chocolate mousse is rich and fluffy. Serve with whipped cream and chocolate flakes.
