November Recap

We had an exciting month of November. We finished up our "Unglued" study and began our Children and Materialism study. We visited the food pantry and had a great time at our cookie decorating class! We look forward to a magical month of December!

Corks and Crafts Event

We are so excited to offer this special event with Corks & Crafts! We hope that you can join us at Sycamore Country Club from 6 p.m. to 8 p.m. to create, eat, and socialize. Food and beverages can be purchased separately from the country club. The cost of the craft and instruction is $40.00. Please feel free to invite your friends and family! Perfect decorating icing recipe


  • 1/4 - 1/2 cup whole milk
  • 1 TBSP softened butter
  • 1 TBSP corn syrup (light)
  • 5 cups powdered sugar
  • 1 tsp. almond extract


Use a whisk, not a hand mixer


  • Microwave the milk and butter in a microwave safe dish until a little bubbly (around 1 - 1.5 minutes depending on the microwave)
  • Whisk in corn syrup
  • Add powdered sugar 1 cup at a time
  • Add almond extract


**Helpful time saver - GFS has holiday pre-cut cookie dough that you "place and bake" for $9.99 for 72 cookies. Then you can just do the fun part - decorating!

Recipe of the month


Ground Turkey Mexican Lasagna


A gluten-free ground turkey Mexican lasagna made with corn tortillas and full of spices, bell peppers, onions, black beans, and cheese. It is a super easy and healthy kid-friendly weeknight dinner recipe!


Ingredients

  • 1 Tbsp olive oil
  • 1 c bell pepper chopped
  • 1 jalapeno pepper finely diced
  • 1 c sweet onion chopped
  • 1 ½ lbs turkey lean 93/7
  • 1-15 oz can crushed tomatoes


Spice Mix

  • 1 ½ Tbsp cumin
  • 1 tsp chili powder
  • 1 ½ tsp paprika
  • ½ tsp garlic powder
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • ¼ tsp cayenne pepper
  • 1 15-oz. can kernel corn drained
  • 1 15-oz. can black beans drained
  • 2 c shredded cheese (Cheddar, Cheddar blend, etc.)
  • 12 corn tortillas


Instructions


  1. Preheat oven to 350 degrees.

  2. In a large skillet over medium heat add oil, bell pepper, jalapeno, and onion. Saute for 5-7 minutes, or until almost cooked through.

  3. Add turkey to skillet and continue cooking for 6-8 minutes.

  4. Keep heat on medium and add crushed tomatoes. Let simmer on low for 5 minutes while fixing spice mix.

  5. Combine spice mix ingredients in a small bowl. Sprinkle into the skillet, stir, and let simmer for another 5 minutes.

  6. Spray a 2 ½ quart CorningWare dish or 9 x 13-inch baking dish with non-stick cooking spray.

  7. Start layering the Mexican lasagna with 1/3 of the turkey meat mixture.

  8. Next, layer 6 tortillas, 1/3 turkey mixture, ½ can of corn, ½ can of beans, and 1 cup of shredded cheese.

  9. Repeat with remaining tortillas, turkey, corn, beans and cheese. Place aluminum foil over baking dish and bake in preheated oven for 30 minutes.

  10. Remove aluminum foil and continue cooking in the oven for 5 minutes.

  11. Let sit for at least 10 minutes before serving. Enjoy!
