What is Veganism?

Vegans, who are not only vegetarians, also don't use other animal products and by products. Some of these include eggs, dairy products, honey, fur, wool, and even cosmetics.

Why Vegan?

People choose to be vegan for health, environmental, and/or ethical reasons. For example, some vegans feel that one promotes the meat industry by consuming eggs and dairy products. Some people avoid these items because of conditions associated with their production. Many vegans choose this lifestyle to promote a more humane and caring world. They know they are not perfect, but believe they have a responsibility to try to do their best, while not being judgmental of others.

Normal Mac and Cheese

Ingredients


  • 1 (8 ounce) box elbow macaroni

  • 1/4 cup butter

  • 1/4 cup all-purpose flour

  • 1/2 teaspoon salt

  • ground black pepper to taste

  • 2 cups milk

  • 2 cups shredded Cheddar cheese

Vegan Mac and Cheese

Ingredients


    • 10 ounces dried macaroni (or about 2⅔ cups)

    • 1 cup peeled/diced yellow potatoes (or russets)

    • ¼ cup peeled/diced carrots

    • ⅓ cup chopped onion

    • ¾ cup water (preferably use liquid from pot of boiled veggies)

    • ½ cup raw cashews

    • ¼ cup coconut milk

    • 2 tablespoons nutritional yeast flakes

    • 1 tablespoon lemon juice

    • ¾ to 1 teaspoon salt (or more to taste)

    • ¼ teaspoon garlic powder

    • 1 pinch cayenne pepper (optional)

    • 1 pinch paprika

Substitutions

One of the most important things that vegan mac and cheese substitutes is the regular milk with coconut milk. Coconut milk comes from the coconut which is not an animal product, it is a nut product. Therefore vegans can drink coconut milk. Also the vegan recipe does not call for any cheese. Instead it uses yellow potatoes, yeast flakes, and carrots. Which are all acceptable in the Vegan lifestyle. The vegan recipe has a lot more ingredients then the normal recipe because it takes a little more ingredients to get all the nutrition a vegan diet calls for.
