Banana Bread

Preparation Time: 90 minutes

Makes 16 Slices


  • What you need
  1. 2 eggs
  2. 1¾ c. sifted flour
  3. 2 tsp. baking powder
  4. ¼ tsp. baking soda
  5. ½ tsp. salt
  6. 1/3 c. vegetable oil
  7. 2/3 c. sugar
  8. 1 c. mashed bananas (about 3 bananas)
  • Equipment/Supplies
  1. oven (you'll need help from your adult assistant)
  2. measuring cups and spoons
  3. mixer
  4. sifter
  5. spatula
  6. small bowl
  7. medium-size bowl
  8. large bowl
  9. bread pan coated with nonstick cooking spray
  • What to do
  1. Preheat the oven to 350°F (180°C).
  2. Beat eggs well in a small bowl.
  3. In a medium-size bowl, sift together the flour, baking powder, baking soda, and salt.
  4. In a large bowl, add the vegetable oil. Add the sugar a little bit at a time, and continue beating until the mixture is fluffy.
  5. Add the eggs to the mixture in the large bowl and beat well.
  6. Add some of the flour mixture to the large bowl and beat well. Then add some of the mashed bananas and beat some more. Continue adding flour, then bananas, then flour, then bananas, until everything is mixed in.
  7. Pour mixture into the baking pan. Bake for 70 minutes.
  8. Flip your banana bread out of the pan, let it cool for a bit, and cut it into slices to eat and share!

Frozen Yogurt Pops

Prep Time: 1-2 hours

Serves 3-4 People



  • What you need
  1. 1 8-oz. container of your favorite flavor of yogurt
  • Utensils
  1. small paper cups
  2. wooden Popsicle sticks (available in craft stores)
  3. plastic wrap
  • Directions
  1. Pour yogurt into paper cups. Fill them almost to the top.
  2. Stretch a small piece of plastic wrap across the top of each cup.
  3. Using the Popsicle stick, poke a hole in the plastic wrap. Stand the stick straight up in the center of the cup.
  4. Put the cups in the freezer until the yogurt is frozen solid.
  5. Remove the plastic wrap, peel away the paper cup, and eat your pop!

Chicken Salad & Greens

Prep Time: 5-10 Min

  • What you need
  1. ½ cup plain, nonfat Greek-style yogurt
  2. ¼ cup low-fat mayonnaise
  3. ½ teaspoon salt
  4. ½ teaspoon black pepper
  5. 1 large celery stalk, finely chopped
  6. ¼ cup red onion, finely chopped
  7. 1/3 cup grapes, cut in half
  8. 2 cups leftover roasted chicken, chopped into ½-inch pieces
  9. 4 cups romaine lettuce, coarsely chopped
  • Equipment/Supplies
  1. Mixing bowl
  2. Knife for chopping
  3. Bowls for serving
  • What to do
  1. In a large bowl, combine yogurt, mayonnaise, salt, pepper, celery, red onion, grapes, and chicken.
  2. Mix gently until everything is well coated in dressing.
  3. Divide lettuce between four bowls.
  4. Top each bowl with some chicken salad. Serve cold.

Crunchy Hawaiian Chicken Wrap

Prep Time: 25 min

  • What you need
  1. 6 whole-wheat tortillas
  2. 1½ cups broccoli slaw
  3. 1 cup spinach leaves, chopped
  4. ¼ cup crushed and drained canned pineapple
  5. 1 pound cooked chicken, diced
  6. ¼ cup low-fat mayonnaise
  7. ¼ cup vinegar
  8. ¼ cup sugar
  9. 1 teaspoon poppy seeds
  10. 1½ teaspoon garlic powder
  11. 1½ teaspoon onion powder
  12. 1½ teaspoon chili powder
  • Equipment/Supplies
  1. Measuring cups/spoons
  2. Knife
  3. Bowl for mixing dressing
  4. Whisk
  • What to do
  1. Prepare dressing by whisking mayonnaise, vinegar, sugar, poppy seeds, garlic powder, onion powder, and chili powder together. Set aside in refrigerator.
  2. Mix broccoli slaw, drained pineapple, and spinach.
  3. Put ½ cup of the broccoli/pineapple/spinach mixture on a wheat wrap.
  4. Top with chicken.
  5. Add 1 tablespoon dressing to each tortilla.
  6. Wrap tortillas, burrito style. Cut on diagonal. Serve immediately or refrigerate.

Peanut Butter Muffins

Prep Time: 35 min

  • What you need
  1. 2 eggs
  2. 1 c. milk
  3. ¼ c. banana (about 1 banana), mashed with a fork
  4. ¼ c. peanut butter
  5. 1/3 c. vegetable oil
  6. ¼ c. frozen apple juice concentrate, thawed (left out of the freezer until it's soft)
  7. ¼ c. nonfat dry milk
  8. 2¼ c. flour
  9. 1½ tsp. baking powder
  10. 1 tsp. baking soda
  11. nonstick cooking spray
  • Equipment/Supplies
  1. oven (you'll need help from your adult assistant)
  2. fork
  3. small bowl
  4. large bowl
  5. mixing spoon
  6. muffin/cupcake tin
  7. paper muffin/cupcake liners
  8. wire rack
  9. measuring cups and spoons
  • What to do
  1. Preheat oven to 350° F (180° C).
  2. In a small bowl, break the eggs and use a fork to beat them a little bit.
  3. In a large bowl, combine the milk, mashed banana, peanut butter, vegetable oil, apple juice, dry milk, and the eggs from the small bowl. Mix with a mixing spoon until the mixture is creamy.
  4. Add the flour, baking powder, and baking soda into the large bowl. Mix again.
  5. Line a muffin tine with paper liners or lightly spray with nonstick spray. Spoon in the muffin mix. Fill each muffin cup about 2/3 of the way up.
  6. Bake for about 15 minutes.
  7. When your muffins are finished baking, remove from muffin tin and cool them on the wire rack. Then it's time to taste and share!

Strawberry Smoothie

Prep Time: 5 min

  • What you need
  1. 2 ice cubes
  2. 1 c. milk
  3. 1/3 c. cottage cheese
  4. 2/3 c. frozen strawberries
  5. 1½ tsp. sugar
  6. 1 tsp. vanilla extract

  • What to do
  1. Pour all of the ingredients into the blender.
  2. Put the lid on the blender and blend for 45 to 60 seconds until smooth.
  3. Pour your smoothie into a glass and enjoy.

Cheesy Chicken Bagel Pizza

Prep Time: 1 hour

4 Servings


  • What you need


  1. 2 (4 1/2-inch, 2 1/4-ounce) plain bagels, sliced in half
  2. 1/2 cup lower-sodium marinara sauce
  3. 1 cup shredded rotisserie chicken breast
  4. 1 cup preshredded part-skim mozzarella cheese
  • Equipment/Supplies
  1. Broiler

  • What to do
  1. Preheat broiler.
  2. Place bagel halves, cut sides up, on a baking sheet. Broil 2 minutes or until lightly toasted.

  3. Spread 2 tablespoons marinara on cut side of each bagel half. Top each half with 1/4 cup chicken, and sprinkle with 1/4 cup cheese. Broil bagel halves an additional 2 minutes or until cheese melts.

Buffalo Chicken Pizza

Prep Time: 30 min

6 Servings


  • What you need


  1. Boboli 12” Whole Wheat Thin Pizza Crust
  2. 3 Laughing Cow Light Blue Cheese Wedges
  3. ½ cup Chopped, Cooked Boneless Skinless Chicken Breasts
  4. 2-3 tablespoons Buffalo Wing Sauce, depending on how hot/saucy you like it (I used Anchor Bar brand, but Frank’s would work great, or whatever other brand you prefer)
  5. ½ stalk of Celery, finely chopped
  6. ¾ cup reduced fat 2% shredded mozzarella cheese
  • What to do
  1. Preheat the oven to 450
  2. Spread Laughing Cow wedges evenly across the top surface of the pizza crust, leaving at least a ½ inch edge around the outside. Place the chopped chicken pieces and celery evenly over the top. Drizzle the Buffalo Wing sauce over the top of the chicken & celery layer, spreading it evenly over the pizza. Finish the pizza by sprinkling the mozzarella cheese over top.
  3. Place pizza on a foil covered baking sheet, a pizza stone (my preference) or straight onto the oven rack (depending on how you like your crust) and bake for 8-10 minutes.

Easy Lime Chicken

Prep Time: 50 min

6-8 Servings


  • What you need
  1. 2 lbs. Just Bare chicken thighs (boneless or bone-in -- or you can also subsitute chicken breasts or legs)

  2. 1/2 cup freshly-squeezed lime juice

  3. 2 cloves garlic, minced

  4. 1 Tbsp. worchestershire sauce

  5. 1 tsp. salt

  6. 1 tsp. black pepper

  7. 2 Tbsp. melted butter

  8. zest of two limes

  9. 1/2 cup chopped fresh cilantro

  10. additional lime wedges (for garnish)

  • What to do
  1. Add chicken thighs, lime juice, garlic, worchestershire sauce, salt and pepper to a large ziplock bag.

  2. Seal and toss to combine ingredients until the chicken is evenly coated.

  3. Refrigerate for at least 30 minutes or up to 8 hours

  4. Preheat oven to 425 degrees F and grease a baking dish with cooking spray.

  5. Remove chicken from bag with a slotted spoon, reserving the marinade, and arrange in a single layer in the baking dish.

  6. Brush chicken with melted butter, and season with additional salt and pepper if desired.

  7. Bake for about 20 minutes, the remove and brush chicken with the reserved marinade.

  8. Bake for an additional 20-30 minutes, or until the chicken is cooked through and the juices run clear. (Baking times may shift for different types of chicken.)

  9. Remove and sprinkle chicken with lime zest and fresh cilantro.

Taco Baked Pasta

Prep Time: 30 min

2 Servings

  • What you need

  1. 1/2-3/4 bag of large pasta like ziti
  2. 1 pound ground beef
  3. 1 package taco seasoning
  4. 1 cup water
  5. 1/2 package cream cheese
  6. 1 1/2 cups shredded cheese
  • What to do

  1. boil pasta until just cooked, drain, run cold water over it
  2. brown ground beef
  3. mix together taco season and 1C of water, pour over cooked beef and let simmer for about 5 minutes until the liquid has reduced
  4. add the 1/2 pkg of cream cheese to the beef mixture, stir until melted and combined, remove from heat
  5. put pasta in your casserole dish or pot, mix in 1C of the shredded cheese
  6. top pasta and cheese with beef mixture, gently mix until the pasta is coated
  7. top with remaining 1/2C of shredded cheese
  8. bake at 350 uncovered for approx 30 minutes
