Culinary Arts visits Circle N Dairy

The culinary arts students toured Circle N Dairy on Friday, May 11, to analyze the importance of "Farm to Table" ingredients. Circle N Dairy produces organic pork, organic grass-fed beef, organic poultry, raw milk, raw cream, raw sour cream, raw Greek yogurt, and ice cream. Students learned about proper nutrition, safety and sanitation, milking procedures, and dairy products. Each student received a sample of "raw" milk to compare to pasteurized milk sold in a grocery store with flavor profile, nutritional value, and value. The highlight of the tour was feeding the young calves!
