Vegan Lentil Chili
1 bag of lentils
1-2 sweet potatoes
2 T. olive oil
2 t. cinnamon
1/2 t. of nutmeg
1 t. chili powder
1.5 t cumin
2 32 oz containers of vegetable broth (try to find broth without MSG)
1.5 cups of water
3 carrots chopped
1/2 onion chopped
1 32 oz can of diced tomatoes (I had the Italian diced tomatoes but you can use either)
2 cloves of garlic.
1 cup of kale (optional)
We garnish with cilantro, and add hot sauce.
1. Put lentils, broth, water and tomatoes into a pot and boil, then bring down to simmer to soften lentils
2. In another pan, sautee olive oil and garlic for 1 minute. Add chopped onion and sweet potatoes and all spices. Cook for 5-10 minutes.
3. Add sweet potato mixture to lentils with carrots and kale
4. Simmer until fully cooked- should be 20-30 minutes.
