Pumpkin Cookies

1 cup brown sugar,firmly packed

1 cup pumpkin

1/2 cup oil

1tsp. vanilla

2 cups flour

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp ginger


  1. Preheat oven to 350°
  2. In a large bowl, beat together brown sugar, pumpkin oil, and vanilla
  3. in a small bowl sift together the dry ingredients
  4. add small bowl to big bowl and stir till smooth
  5. add raisins and chopped nuts, opional
  6. on a cookie sheet, drop spoonfuls (make sure to evenly separate cookie sheet) 5 dozen balls
  7. bake to 12-15min.
  8. let cool on wire rack.
