Recipe: Roasted Eggplant Spread
I noticed there are lots of peppers and eggplant on the market this week and wanted to share with you all. It makes a flavorful, delicious spread/dip. I'd eat it with cardboard if I could :-)

Roasted Eggplant Spread
Ingredients:
1 medium eggplant, peeled
2 red bell peppers, seeded
1 red onion, peeled
2 garlic cloves, minced
3 tablespoons good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon tomato paste
Directions:
- Preheat the oven to 400 degrees F.
- Cut the eggplant, bell pepper, and onion into 1-inch cubes. Toss them in a large bowl with the garlic, olive oil, salt, and pepper. Spread them on a baking sheet. Roast for 45 minutes, until the vegetables are lightly browned and soft, tossing once during cooking.
- Cool slightly.
- Place the vegetables in a food processor fitted with a steel blade, add the tomato paste, and pulse 3 or 4 times to blend. Taste for salt and pepper.

Build out Update
Update: Continued progress this week! Bathroom is pretty much finished, now we're just waiting on inspection so we can get electrical done and inspected. New website is almost done and I hope to launch in the next couple of weeks. I'll continue to keep you all posted and give everyone plenty of notice before we move. As of right now we are probably still a couple of months out depending on how inspections go.

Since I'm not sure when the new store will open up I went ahead a created Volunteer schedule until end of October. Hopefully we'll be at new location sooner... Please click link below if you can help!
Please consider volunteering during market pick up. I can’t run the market without your help! Shifts are 1 hour long and go by really fast. It's a great opportunity to meet and help your fellow members!

If you are interested in volunteering but unsure exactly what that involves, please let Nora know and she will do a quick "volunteer orientation" with you on a day/time that you pick up.
