Puree
Ingredients
- 1 frozen banana, peeled and sliced
- 2 cups frozen strawberries, raspberries, or cherries
- 1 cup milk
- 1/2 cup plain or vanilla yogurt
- 1/2 cup freshly squeezed orange juice
- 2 to 3 tablespoons honey or to taste
Directions
Put all the ingredients in a blender and process until smooth. Pour into glasses and serve.
Coulis
Ingredients
- 1 cup frozen unsweetened strawberries
- 1/2 cup sugar
- 1 tablespoon lemon juice
Preparation
1. In a medium saucepan, combine the strawberries, sugar, and lemon juice. Bring to a boil over medium-high heat. Transfer to a blender.
2. Purée until smooth, strain, and set aside. Store in a sealed container in the refrigerator for up to 1 week.
Roast
Roasted Strawberries
4-6 cups fresh strawberries, hulled
1/4 cup sugar
1 tsp vanilla extract
Preheat oven to 375F. Lightly grease a large, rimmed baking sheet (or line it with foil, lightly greased).
Cut strawberries in half or in quarters, depending on how large the berries are. Transfer to a large bowl and toss with sugar and vanilla.
Transfer berries to prepared baking sheet and arrange in an even layer.
Bake for 20-25 minutes, until berries are tender but still have some shape to them.
Allow to cool slightly before using. Store leftovers in an airtight container.
Makes about 3 cups berries.
