California Quinoa Salad
2 Tablespoons of fresh cilantro
1-2 red or green bell peppers
1 mango (diced)
1/2 cup raisins
1 red onion- diced
3/4 cup almonds
3/4 cup of coconut flakes unsweetened
1 cup of Quinoa (we start out by using a fine mesh strainer to rinse Quinoa a couple times prior to cooking)
2 cups water to 1 cup of quinoa, this can be made easily in the rice cooker or on the stove it takes 15-20 minutes.
For the Dressing: 1/4 cup of Balsamic vinegar (I used white), 2 limes (I zested the limes and then squeezed juice onto the salad)
Why Quinoa?
Quinoa is rich in high quality protein, contains all 9 essential amino acids, a good source of iron, and it's high riboflavin content cuts the frequency of migrane occurrence.
