Parenting Corner: Back From Spring Break!!
We were glad to welcome students back after Spring Break! We are at the point of the year where our students are wanting to be outside in the sunshine playing. The goal is to help them stay focused on the task at hand and finish strong! Please view the following video with your child. I believe that we can continue to make this the best school year EVER!!

Chilli Cook-off Recipes
Ingredients:
2 chicken breasts
3 cans of white beans (navy, cannellini, great northern)
1 medium onion (diced)
Minced garlic
Frozen corn
Chicken broth (maybe 3 cups?)
Lime juice
Pickled jalapeños (like 8, dice them up small and add several spoonfuls of the juice too)
Fresh cilantro (minced)
Cumin
Chili powder
Oregano
Cayenne
Salt
Pepper
2 blocks cream cheese
First dice an onion and cook that and several spoonfuls of garlic and put it in the slow cooker.
Then put everything but the chicken and cream cheese.
I also cook the chicken separately and then shred it and add it later to keep it tender. I feel like it gets chewy in the slow cooker for several hours. But you could put it in there. Just take it back out and shred it at some point after it’s cooked.
Add the cream cheese like 20-30 minutes before serving and turn the cooker down to low.
I feel like the toppings to garnish make this chili and I use sour cream, cilantro, fresh jalapeños, pickled jalapeños and green onion.
3rd Place Winning Recipe:
2 pounds ground beef
1 pound Italian sausage
1 cup chopped onion
2 28 oz cans Tomato sauce
2 teaspoons chili powder
2 15 OZ cans spicy chili beans, undrained
1 15 OZ can kidney beans, rinsed, drained
1 15 OZ can corn, drained
2 teaspoons honey
In a large skillet, combine beef & sausage, cook over medium heat until brown. Drain. Pour mixture into slow cooker. Add remaining ingredients. Mix well. Cover. Cook on low 6 to 8 hours. Makes 12 servings.
