Color Your Plate in May

A Colorful Plate Leads to Better Health
Do you ever stop and look at your plate of food before you eat it? What do you see? Is it pleasing to look at or dull and lifeless? Could it perhaps represent your mood or outlook on life or about food itself? Do all of your meals generally have the same repetitive colors or foods represented (meat, starch and maybe a vegetable)? In this issue I will give you ideas on how to make your plate of food look more like a work of art, then a dull conversation!
Dress Your Omelet in Color and Flavor!
This recipe is really just your classic egg (or egg white, if you prefer) omelet, but packed full of vitamins and nutrients! Eggs don't have to be boring! This is also so quick and easy to make - 10 minutes (tops)! Don't think you have time for "all of this" in the morning? Dice and store the veggies in the fridge the night before, and you'll be all set to add them to your omelet in the morning! We love to add fresh parsley, red and orange peppers, mushrooms and tomatoes to ours topped with a "kick" - salsa! MMM, spicy goodness! Experiment with different flavors and colors of veggies that you and your family will enjoy! Eggs will never look better, or taste more exciting!
Kale Explosion Salad
Can you saw, "Y-U-M-M-Y"? This salad is bursting with color and flavor! A little prep the night before, or over the weekend if you are doing Mason Jar Salads. If you aren't preparing Mason Jar Salads, you should be! Connect with me and I'll get you started! This salad has avocado, tomatoes, mushrooms, cantaloupe, strawberries, black olives, toasted sesame seeds, cranberries, walnuts and diced chicken! This salad tastes awesome with a Strawberry/Balsamic Vinegar drizzled on top, or Braggs Ginger and Sesame dressing! Again, quick and easy, but so nutritious! Awaken your taste buds!
Not Your Ordinary Pasta Dinner!
Watch out - this dish is LOADED! Jam-packed with 25 grams of protein and 12 grams of fiber (and that's just what's in the pasta)! WHAT? Crazy nutrient dense! This dish is prepared with organic black bean, gluten-free pasta, gently covered in a pumpkin chipotle pasta sauce. Mouth watering yet? Not done...! Add raw red and yellow peppers, and garnish with raw, fresh spinach (from your own Tower Garden) chopped and generously spread all over! Wait, what was that about my very own "Tower Garden"? What's that? Check it out - you'll never look at gardening the same way again!
