The menu has been created by Mercer chef (and SCS Grad) Ryan O'Donnell and will be served family style:
Salad of maple molasses braised pork belly, beluga lentils, pickled butternut squash, Soiled Reputations fall greens, wild blueberry and Black Swan barbecue sauce
Pickled garlic scape bannock with smoked butter

Vancouver-based writers and adventurers, Lindsay Anderson and Dana VanVeller, embarked on a cross-Canada adventure that brought them to all 10 provinces and all 3 territories in search of diverse and interesting stories of Canadian food culture. The result is FEAST: An Edible Road Trip, a collection of recipes and stories. Dana has authored the food blog, Spoon! while Lindsay was a food blogger for Tourism Richmond’s 365 Days of Dining. Dana is currently working toward a Certificate in Food Security from Ryerson University and Lindsay holds a Masters of Food Culture and Communications from the University of Gastronomic Sciences in Italy.

About Stratford Chefs School
Nestled in the heart of Stratford, Ontario, the Stratford Chefs School is a not-for-profit career college focused on the innovative, hands-on training of high quality, aspiring chefs and culinary entrepreneurs. Since 1983 the School has helped to set the standard for excellence in culinary training in Canada, and produced over 750 graduates who contribute to the development of a distinctive Canadian cuisine.
Between October and March each year, Stratford’s most cherished culinary secret is the School’s Dinner Series. As part of their training, students enrolled in the 2-year professional program rotate through kitchen positions to produce new menus daily under the guidance of the School's faculty of esteemed local chefs and guest chefs from across Canada and around the world.
In 2017, the Stratford Chefs School established their Open Kitchen program; spring and summer cooking classes and learning experiences devoted to the dedicated home cook. Classes and workshops include hands-on cooking intensives, menu planning, pastry, fermentation, wine tasting, and Team Building & Wellness.
