The healthy potluck is such a great learning experience too! You will get ideas from other people on how to get creative with whole foods. We will all be bringing healthy items to share. If you can, write down the recipe so that others can see what you've created.
Are you a little intimidated by the idea?
All I can say is...do your best (and receive some grace in the process). The hardest part is figuring out where to start. Maybe you need to purchase a pre-made salad, a veggie tray, or something healthy from Costco? Or maybe you know you need to revamp one of your family recipes and take some of the junk out of it? Maybe you just need to keep things really simple to start?
If we don't start- we can't progress. So I just want to encourage you to try- no matter how busy you are and how much you feel like you might not know what you are doing...because the next piece is figuring out how to apply the wonderful things that we've been taught over the last several weeks. Pray through it if needed- God meets us where we are.

3 cups of steamed broccoli
1 to 1.5 jalapenos (to taste)
3 T cilantro
2 T green onion
1/3 cup of white beans
1/4 tsp chili powder
1/4 tsp salt
1/4 tsp pepper
Blend all of these things in a food processor or blender. When I made this it was still warm from the broccoli and it was actually very good warm. If I were to do this again I might increase the beans and add lemon, lime, or garlic. Again, this was an experimental recipe. Thank you to all those daring souls who tried it!
Strawberry Spinach Quinoa Salad:
1.5 cups of Quinoa, it can be cooked easily in a rice cooker (2 cups liquid to 1 cup quinoa)
1.5 cups spinach
3/4 cup strawberries
2 green onions
1/4 cup of feta cheese
1/4 cup of pecans
For the dressing:
1 T olive oil
1/4 cup of balsamic vinegar
This salad could also use some herbs for flavor which I forgot to buy- but fresh mint or basil would be a great addition as well as some red onion.
