5 COFFEE DISCIPLINES
The goal of the coffee giveaways has been to bring more awareness to customers about our new coffee. Keeping that in mind, there are some key things we all need to remember when serving THRIVE Farmers coffee to customers!
#1: Hold Time Should Not Exceed One Hour
The hold time for brewed coffee in the server, from start of the brew cycle until it is served, should not exceed one hour. “We know this is hard, particularly after breakfast, but if you let it sit past an hour, that’s when you start getting bitterness,” says Matt. Less than half an ounce of coffee held past the one-hour hold time can taint an entire batch of coffee.
#2: Allow the Brew Cycle to Complete
“In the morning, with drive-thru customers waiting, there’s a tendency to start pouring cups early before the brew cycle is complete; don’t do it,” says Jay. “It changes the ratio of the entire batch.” A suggested best practice is to have the drive-thru customer pull the car up and then have a Team Member go out and deliver the fresh cup of Coffee once the cycle is complete.
#3: Rinse Between Cycles
The rinse cycle should be run in between each batch of coffee. This ensures that leftover coffee and/or coffee residue in the server does not impact quality and flavor of the next batch.
#4: Clean Daily
The coffee server and brewer should be cleaned at the end of each day to remove oil and residue. “That daily clean with the cleaning tablet is critical,” emphasizes Jay.
#5: Pour Grounds into a Filter on the Countertop
Lastly, pour freshly ground coffee into a new filter on the countertop, not directly into the filter cone. “When things get hectic, there’s a tendency to want to put the filter in the cone and pour coffee directly into it,” says Matt. “Filling the new filter on the countertop helps keep grounds from getting into the brew cone and the customer’s cup of Coffee.”
