Why a Red Cabbage Indicator Works
Red cabbage contains a pigment molecule called flavin an anthocyanin. This pigment is also found in many other fruits and Vegetables. Very acidic solutions will turn anthocyanin a red color. Neutral solutions turn it a blueis purplish color. Basic solutions turn it a greenish-yellow color. Using that information it is possible to determine the pH of a solution based on the color it turns the anthocyanin pigments in red cabbage juice.
