Heirloom Pumpkins & Butternut Squash

Gibson Farm is back on the market! They've listed their organically grown Heirloom Pumpkins and Butternut Squash! These beautiful pumpkins are perfect to make pumpkin pie, muffins, soup, puree for smoothies, roasted (with a drizzle of cinnamon butter, honey or maple syrup ) or simply enjoy them as fall decoration until your ready to cook 'em. Check out DeLynn's Gluten Free Pumpkin Bread recipe in her listing description on the market. Can't wait to bring a couple of these home!

Butternut Squash fans are ready for a treat! If you've never tried butternut you need to. It's a great source of fiber, vitamin C, manganese, magnesium, and potassium, and is also an excellent source of Vitamin A and Vitamin E. You can cube and roast with sea salt, pepper, and other seasonings, or add to stews or pureed for soups. Makes great breads and muffins too!

These are seasonal and once they are gone - they are gone...


Alta Cucina Italia on the market this week (Monthly Order)

Order their award winning, local, small batch tomato sauces, balsamic vinegars, pestos, infused olive oils, and more this weekend. We only order from them once a month so please keep this in mind when ordering. Ordered items will be at this Wednesday's pick up.

Adriana uses organic herbs and fruits for the balsamic & olive oils. Olive Oil and Balsamic Vinegar that comes from Italy, it's not certified organic but free of GMOs. In Italy all 20 regions are against the cultivation of GMOs.

I love the crema balsamica! Makes a great salad dressing - just mix with EVOO, sea salt & pepper add a little dijon for mustard kick. Sometimes I don't even mix, I just drizzle over my salad greens. Too easy!

Chicken Bone Broth - new price

Soup season is just around the corner and Back In Time has reduced the price of their delicious, collagen rich, and healing chicken bone broth. Enjoy the lower price for this great product! This bone broth is made from Back In Time's soy free chicken, organic apple cider vinegar, organic vegetables, organic herbs, organic spices and pink Himalayan salt. It is slow simmered for 48 hours then immediately frozen to preserve nutrients. Your order will be in the freezer at pick up.

In addition, Carrell Farm offers Alpaca Bone Stock, Lamb Bone Stock and Water Buffalo Bone Stock.


Restored Earth on vacation this week - a do over

Poor, sweet Sarah from Restored Earth was unable to take vacation the previous week due to Hurricane Dorian. She's going to try again and won't be on the market this weekend. She just wanted y'all to know why she wasn't on the market this week.


Recipe: Roasted Eggplant Spread

I have a confession. I used to be a bonafide eggplant hater - until I tried this recipe. I remember in 2003, when my daughter was a baby I would fold my mountain of clothes while watching Food Network. I loved watching Barefoot Contessa's Ina Garten. Her voice was always calming and she made the recipes look so simple and carefree. Ina was always ready for a dinner party, which at that point of my life, I was not and could barely stay awake. This was one recipe I attempted and absolutely loved. Reminds me of late Summer/Fall. So easy!

I noticed there are lots of peppers and eggplant on the market this week and wanted to share with you all. It makes a flavorful, delicious spread/dip. I'd eat it with cardboard if I could :-)


Roasted Eggplant Spread


1 medium eggplant, peeled

2 red bell peppers, seeded

1 red onion, peeled

2 garlic cloves, minced

3 tablespoons good olive oil

1 1/2 teaspoons kosher salt

1/2 teaspoon freshly ground black pepper

1 tablespoon tomato paste


  • Preheat the oven to 400 degrees F.
  • Cut the eggplant, bell pepper, and onion into 1-inch cubes. Toss them in a large bowl with the garlic, olive oil, salt, and pepper. Spread them on a baking sheet. Roast for 45 minutes, until the vegetables are lightly browned and soft, tossing once during cooking.
  • Cool slightly.
  • Place the vegetables in a food processor fitted with a steel blade, add the tomato paste, and pulse 3 or 4 times to blend. Taste for salt and pepper.

Build out Update

Update: Continued progress this week! Bathroom is pretty much finished, now we're just waiting on inspection so we can get electrical done and inspected. New website is almost done and I hope to launch in the next couple of weeks. I'll continue to keep you all posted and give everyone plenty of notice before we move. As of right now we are probably still a couple of months out depending on how inspections go.

PLEASE HELP! Volunteers Needed at pick up!


Since I'm not sure when the new store will open up I went ahead a created Volunteer schedule until end of October. Hopefully we'll be at new location sooner... Please click link below if you can help!

Please consider volunteering during market pick up. I can’t run the market without your help! Shifts are 1 hour long and go by really fast. It's a great opportunity to meet and help your fellow members!

Thank you Kelly, Gwen, Chuck, Miki, and Melanie for volunteering last Wednesday! We couldn't have the co-op without our amazing volunteers!!

If you are interested in volunteering but unsure exactly what that involves, please let Nora know and she will do a quick "volunteer orientation" with you on a day/time that you pick up.
