Controlled Atmosphere is a storage methode in which oxygen, carbon dioxide and nitrogen are concentrated and and temperature and humidity are regulated. Altering the composition of the foods packaging boosts it's shelf life, and many companies are turning to this new method, such as Kraft, Del Monte, and Target.
