Preventing accidents and illnesses

Preventing cuts

Store sharp knives away from other utensils. Keep knives sharp. Dull knives are dangerous. ALWAYS use cutting boards. Wash knives seperatley. Never put a knife in soapy water. Only use a knife for its intended purposes. Hand a knife by extending the handle.

Preventing slips and falls

Wipe up floor spills ASAP. Walk dont run. Close cabinet drawers ASAP.

Preventing burns

Do not touch the stove top. Assume that every pot and pan is hot. Turn pot handles. Always use oven mitts when taking things out of the oven. Open lids away from body.

Clean

Wash your hands with warm water and soap before and after handling foods. Keep the area clean (wash cutting boards, dishes, etc). Use paper towel to clean the surface.

Seperate

Seperate raw meat, poultry and seafood from other foods in your shopping cart, bags, and refrigerator. Cross contamination is how bacteria is spread.

Cook

Cook foods to a safe temperature. Cook properly until not raw. Keep it hot or refridgerate it. Boil sauces etc.

Chill

Refridgerate parishables. Never defrost food with heat. Seperate large amounts of leftovers into shallow containers. Dont overstuff refridgerator. Dont make temp too low.

Types of Foodborne Illnesses

Salmonella

Symptoms- Fever, chills, headache(with sudden onset), stomach cramps, nausea, vomitting.
Common food sources- Raw or undercooked poultry, eggs, milk, unpasturized dairy products, raw fruits and vegetables, homemade dairy products.
Potential health impacts- can cause dehydration, sores filled with pus, chronic arthritis, inflamation of colon.

Listeria Monocytogenes (Listeria)

Symptoms- Persistant fever, muscle aches, constipation, nausea, headache, stiff neck, confusion, loss of balance.
Common food sources- Deli meats, hot dogs, raw cheese, meat spreads, smoked seafood.
Potential health impacts- Can lead to misscarriage to pregnant women or infection of the brain.

E. Coli 0157:H7

Symptoms- Severve stomach cramps, diarrhea, vomitting, nausea, headache, little or no fever.
Common food sources- Beef(raw or undercooked), unpasturized apple juice.
Potentionl health impacts- Kidney failure, blood disorder
