Greek Chicken Pasta
1 tablespoon and 1 teaspoon chopped red onion
1/2 teaspoon olive oil
3/8 crushed clove garlic
2-1/2 ounces skinless, boneless chicken breast meat cut into bite-sized pieces
1/8 (14 ounce) can marinated artichoke hearts, drained and chopped
1/8 chopped large tomato
1 tablespoon and 1 teaspoon crumbled feta cheese
1-1/2 teaspoons chopped fresh parsley
1 teaspoon lemon juice
1/4 teaspoon dried oregano
salt and pepper to taste
3/8 lemons, wedged, for garnish

Step 2: Heat olive oil in a large skillet over medium-high heat. Add onion and garlic; sauté for about 2 minutes or until fragrant. Stir in the chicken and cook for about five to six minutes, stirring occasionally, until the chicken is no longer pink in the center and the juice runs clear.
Step 3: Reduce the heat to medium-low; add artichoke hearts, tomato, feta cheese, parsley, lemon juice, oregano, and cooked pasta. Cook and stir for about two to three minutes, or until heated through. Remove from the heat, season with salt and pepper, and garnish with lemon wedges.
