Rolling Ridge Parent News
May 4
Hello Everyone!
I hope you are all staying safe and healthy! The district is working on plans to get your child's belongings back to you. As of right now, we are looking at being able to get their belongings back the week of May 18th. We are still working on a plan, but it is looking like it will be done like dismissal where you drive up to the school with your dismissal number and we will pass along the belongings. Thank you for your patience and once I have more information I will let you know.
In the meantime, if you have library books please feel free to bring those back during Lunch Distribution along with textbooks you may have at home. I will have bins for you to put them in. If not we will ask that you bring those items back during the material unification day.
It is getting to be that time of year when we begin to think about next year. So if you know your child will not be returning to RR next year please let us know. We hope you are all staying healthy and safe!
A note from the district:
Dear Parents,

Please click the link below for more information and to apply. Questions may be directed to Kim Hawkins, Assistant Director of Early Childhood at kahawkins@olatheschools.org

Featured Recipe
Ingredients:
1 pound penne or other small pasta
2 cups broccoli florets
1 pound boneless, skinless chicken breast cutlets
2-3 tablespoons Cajun seasoning (see notes)
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, minced
1/2 cup dry white wine
2 cups heavy cream
2 cups (8 ounces) Wisconsin parmesan cheese, shredded
Salt And pepper
How to Make:
Heat oven to 200°F. In a large pot, bring 4 quarts salted water to boil.
Add pasta and cook until al dente, about 9 minutes. Drain pasta, reserving cooking water. Set pasta aside.
Return cooking water to boil. Add broccoli; boil until just tender and bright green, about 2 minutes. Plunge immediately into the bowl of ice water. Drain and set aside.
Meanwhile, sprinkle both sides of chicken generously with Cajun seasoning.
In large skillet, heat oil until shimmering. Arrange chicken in a single layer and sauté, flipping once, until temperature on internal thermometer reaches 155°F, about 5 minutes per side. Remove from skillet, cover with foil and transfer to the oven to keep warm.
Wipe skillet with a paper towel and return to the stove. Over medium-high heat, melt butter and heat until foaming. Stir in garlic; sauté until fragrant, about 30 seconds.
Whisk in wine; bring to simmer. Simmer until sauce has reduced by half, about 2 minutes.
Whisk in cream; simmer until slightly thickened, about 2 minutes. Fold in parmesan cheese. Season with salt and pepper.
Add reserved pasta to skillet and toss gently to coat. Arrange broccoli over pasta; top with chicken and garnish with additional parmesan cheese. Serve immediately.
Notes:
To make your own Cajun Seasoning: Combine 1 tablespoon garlic powder, 1 tablespoon Italian seasoning, 1 tablespoon paprika, 1 tablespoon salt, 1/2 tablespoon black pepper, 1/2 tablespoon cayenne pepper, 1/2 tablespoon dried thyme and 1/2 tablespoon onion powder.
To get a head start: The pasta can be cooked in advance, refrigerated, and refreshed in hot water just before serving. The broccoli can be blanched and shocked in ice water in advance; simply store in the refrigerator in cold water. The Cajun seasoning can be made anytime

EXCITING THINGS ARE HAPPENING!
We will be utilizing OPL’s Facebook page to host our Summer Kick-Off party and promote the Summer Reading program! Children will join Adults and Teens in utilizing READsquared for the first time this year. Reading logs will also be available on our website if a printed version is preferred. Our staff is working on creative ways to get reading logs to customers that may not have technology access at home.
In addition to this change, the staff is working on modifying summer programs and will continue to utilize digital platforms throughout the summer. We will not host in-person programming this summer, staying consistent with Johnson County Libraries. A communication regarding summer usage of study rooms, meeting rooms, and equipment will be coming next week.
Additionally, the library offers daily virtual read-alouds by library staff: https://olathelibrary.librarycalendar.com/events/month/2020/04
