~~~ RECIPES & TIPS ~~~
Spaghetti Sauce
Mexican Gherkin Cucumbers
Looking like lilliputian watermelons with their distinctive dark and light green “rinds,” cucamelons make up in character what they lack in size. The cucamelon (Melothria scabra) is an heirloom vegetable native to Mexico and Central America, where it’s known as sandía ratón (“mouse melon”) or sandita (little watermelon). Cucamelons have been around since pre-Columbian times, but were not brought into botanical classification until the mid-1800s. Despite being a member of the Cucurbitaceae family, cucamelons are part of an entirely different genus of plants and are only distantly related to cucumbers. Source: gardenbetty.com
While Mexican gherkins make a delicious snack, they're also healthy - high in antioxidants, vitamins, and fiber, but low in calories.The cucumber-citrus flavor makes it easy to enjoy them. Add them to salads, chop for a flavorful salsa, use in stir-fries, or pickle them to enjoy later. One of the most popular ways to eat them, though, is just by the handful! Mexican gherkins can stay crisp for up to 2 weeks stored in the refrigerator's vegetable drawer.
Eggs & Cherry Tomatoes
You probably have many recipes already that you use eggs in, but consider pairing them with this week's cherry tomatoes for a colorful and delicious meal!
