What is Thermal Preservation?
Adding or removing heat to alter shelf-life. Shelf-life-- time food can be stored and still maintain its quality.
Cold Processing
Definition: Removing heat from food to slow deteriortion from enzymes and bacteria. Examples: Refrigeration, and Freezing.
Heat processing
Definition: Adding heat to a food to destory enzymes and some spoilage and pathogenic bacteria. Examples: Blanching, Commercial sterilization, Pasteurization, Sterilization, Dehydration, and Canning
