Socrative
Create formative assessments that students can take on any Internet-enabled device. You can also share quizzes between teachers.

Have students create a book to demonstrate their learning. Book allows you to use pictures and drawing for your illustrations and contains some story templates. If you create a free Scribble Press account, students can "turn in" their book by publishing to the web. You would then log in to your account on any computer and see all of your students' books (versus having to look at each iPad).

Prezi for iPad allows students to log in and edit (with limitations compared to the online version) their Prezis. You can download Prezis to work offline. It also works really well to present from.

Stuff I Used Today
Air Server - download for your computer, allows your iPad screen to be projected on your computer. Hook your computer up to the projector and you can walk around the room and present from your iPad.
Adonit Jot Pro - stylus to write on the iPad; there are a wide variety of others, in all shapes and sizes, but I wouldn't recommend spending less than $10 regular price.
