Teacher of the Week:
Why did you choose to teach at Daphne Middle school? The principal Eddie Mitchell made a deal with BMMS principal Johnny Cabiness for me to be transferred to DMS as a science teacher because he knew I had 2 young girls I was raising and they thought it was best for me to be closer to home.
What is your expectations of your students? I expect my students to show up with a positive attitude and put forth effort with their work.
Have you ever worked or taught at a different school? Mary Montgomery High, Baldwin County High , Bay Minette Middle. How low have you been at DMS?
16 years
Why did you choose to teach History? I believe that young people need to be exposed to the past and learn to appreciate the struggles and accomplishments that have enabled them to live as they do today. I have also taught Science, English, Literature and Hand to Hand combat in the Marines which helps with classroom management.
What makes you unique as a teacher?
My wide range of life experiences, my understanding of how we are all the same even though we have differences and my ability to stay young at heart and identify with the students. Also being patient sure does help.

Literature Write Up: The Truthful Woodcutter
But his efforts were in vain. Finally he burst into tears. hearing his sobs, an Angel appeared before him.
The Angel dived into the river and came up carrying a golden axe. The wood cutter did not accept it. He stated that his axe was made of iron.
The Angel disappeared and soon returned with a silver axe. The wood cutter again denied that it was his axe.
The Angel once again plugged into the river. It soon reappeared carrying the axe of the wood cutter. The poor man greeted the angel with words of profuse thanks and great joy.
The Angel was impressed by the man's honesty.
She presented him with the golden and silver axes in recognition of his truthful nature.
Moral of the story: Truthfulness brings it's own reward.

Recipe of the Week: Stuffed Croissant Breakfast Strata
- 8 slices bacon
- 1 cup chopped onion
- 1 cup chopped red and/or green sweet peppers or sliced, halved zucchini
- 1 cup sliced fresh cremini mushrooms
- 1 1/2 teaspoons dried basil, oregano or thyme, crushed
- 2 cups lightly packed, coarsely chopped fresh spinach
- 8 ounces colby and Monterey Jack cheese or American cheese, shredded (2 cups)
- 6 eggs
- 2 cups milk
- 3 tablespoons Dijon-style mustard
- 1/2 teaspoon ground black pepper
Directions for How to make it:
- Preheat the broiler. Slice the croissants in half horizontally. Arrange croissant halves, cut sides up, in a single layer on an extra--arge baking sheet. Broil 4 to 5 inches from the heat for 1 to 2 minutes or until light brown. Set aside.
- In a very large skillet, cook bacon over medium heat until crisp. Drain bacon on paper towels, reserving 1 tablespoon drippings in skillet. Crumble bacon; set aside.
- Cook onion, sweet peppers, mushrooms, and basil in hot bacon drippings about 5 minutes or until vegetables are almost tender, stirring occasionally. Add spinach; stir until wilted and well coated. Transfer onion mixture to a colander set in sink; drain. Stir in bacon. Set aside.
- In a greased 3-quart rectangular baking dish, arrange croissant bottoms, cut sides up, in a single layer, overlapping slightly. Sprinkle cheese over croissants. Spoon onion mixture over cheese; add croissant tops, cut sides down.
- In a large bowl, beat eggs with a rotary beater; beat in milk, mustard and black pepper. Carefully pour egg mixture over strata; gently press down on croissants. Cover and chill in the refrigerator for 8 to 24 hours.
- Uncover strata. Let stand at room temperature for 30 minutes. Bake, uncovered, in a 325 degree F oven for 50 to 55 minutes or until a knife inserted near the center comes out clean and strata puffs up, covering with foil the last 15 minutes of baking time to avoid overbrowning. Remove from oven. Let stand for 10 minutes before serving. Serve warm. Makes 10 to 12 servings.
