Welcome to our Open Kitchen!
For the first time in the School’s 34 year history we are offering spring and summer cooking classes and learning experiences devoted to the dedicated home cook.
All classes are held at the SCS Kitchens (136 Ontario Street, Stratford).
Trade Secrets
Intensive workshops focused on a cooking technique, dish or product. Subjects include Wine, Pastry, Butchery and more.
Get Cooking!
Intensive workshops focused on themed recipes. Subjects include Bistro, Vegetarian, and International Cuisine.
Boot Camps
A multi-day course focused on skill and knowledge development. Subject areas include Fermentation, Cookery, Pastry, Bread and Wine.
Team Building & Wellness
Social and educational hands on cooking events for groups of 15 to 30 allow guests to cook alongside friends and colleagues or break into teams and compete.

Learn basic pasta making techniques, including the preparing, rolling and cutting of fresh pasta. Trade Secrets | Summer Blush: The World of Rosé Wine
Think pink this summer! Rosé wine is having a well deserved resurgence. With bottles prominently populating the shelves of your local liquor store, it can be hard to know which one to best pair with a meal or appeal to your palate. Let sommelier Bob Latham guide you through the many shades and flavours of rosé during this fun three hour tasting. Enjoy! Perfect for the beginner to intermediate wine enthusiast.

Boot Camp: Fermentation | Vibrant Vegetables: Full Sour Dills, Preserved Lemons, Cumin Beets
Introduce yourself to the wonderful world of do-it-yourself fermentation. Chef Eli Silverthorne teaches you how to make fermented vegetables and provides you with the theoretical background necessary to safely and easily ferment almost anything! Perfect for the beginner or intermediate home chef, or even trade professional.

Trade Secrets | Sticky Business: Bees, Honey, and Food Production
Stuart Arkett uses his knowledge as an experienced beekeeper and honey supplier to local restaurants to lead a discussion on the importance of bees as pollinators for food production. Topics will include: stressors to bees that threaten food security and sustainability, and honey production and characteristics (grades, floral types, urban vs. rural beekeeping). Participants will have a chance to taste various types of honey and visit an urban apiary at The Bruce Hotel.

Kids Can Cook! | Get Ready for Father’s Day

Part 2 of a 2 part course
Learn everything the home cook needs to slice, chop and dice properly and safely at home!
Do you love to cook but lack the confidence to work with a proper 8" Chef Knife?
Do you wish you were more skilled at using kitchen knives to achieve better cooking results?
Take this fun and interactive class to:
- Learn Classic cutting techniques (dice, chop, chiffonade etc...) from Instructor, Ian Middleton, to elevate your prep game.
