Experiencing Chichen Itza | by Jazmine P.
Mexico has a lot of history that makes it an ideal place to visit. One of the most popular tourist destinations is Cancun, Mexico. Cancun is located on the Caribbean Sea and offers a variety of things to do. Chichén Itzá is a very popular destination for tourists. There is a lot of knowledge that supports the history of the Mayan people. When visiting Chichén Itzá, you are offered many options to choose from when it comes to exploring. On a tour, you can also go swimming in a cenote. It is an underground water source connected to the ocean that was used for sacrifices centuries ago. Although you can go swimming, many people chose not to because there are fish and it is really cold. However, it was all worth it. After the cenote, we visited a restaurant that was a very unique place. They had dancers and singers and it was very fun and exciting. The most exciting part was the Temple of Kukulcan which is about 1,100 years old. There is a jade jaguar in the little room on the top of the pyramid. The sun comes down the stairs to appear like a snake. When you clap your hands at the bottom of the pyramid, it sounds like the sacred quetzal (kuk) bird. The pyramid suggests that the Mayans were extremely intelligent builders. However, the pyramid also helps in learning about their religious beliefs so many years ago. This was probably one of the best experiences I have ever had. It is easy to see why it was declared a World Heritage by UNESCO in 1988.

Valentine’s Day reminds me of the smile I smile when I think of you.
When I hear your beautiful name it rings sweet and true.
Valentine’s Day reminds me of the strength and comfort I get from knowing there are people like you in my life.
We have never been the kind to listen to other people's strife.

Delicious Pepperoni Pizza | Contributed by Briana D.
Ingredients
-2 cups of white flour
-2 tablespoons of sugar
-2 teaspoons of yeast
-1/2 teaspoons of salt
-1 cup of lukewarm water
-2 tablespoons of oil
-ketchup
-shredded part-skim mozzarella cheese
-pieces of sausage
Instructions
1. In a bowl, combine 1 cup of flour, sugar, yeast, and salt. Blend all the ingredients well.
2. Add water and oil to the mixture, and mix until everything is well combined.
3. Keep adding the remaining flour until the dough pulls away from the bowl.
4. Cover the bowl with a kitchen plate and allow for it to sit for around an hour.
5. After the dough has risen, take it out of the bowl and cut it into separate slices.
6. Form a small, circular shape and allow the dough to fry on both sides in a pan coated with oil.
7. When the dough has fried, spread ketchup on it and sprinkle with some part-skim mozzarella cheese. Place the desired toppings (in this case sausage) on top.
8. Enjoy your pizza!

Recipe Ingredients
1 cup of butter
1 cup of white sugar
3 eggs
1 ½ teaspoon of vanilla
2/3 cup unsweetened cocoa powder
½ cup all purpose flour
¼ teaspoon salt
½ teaspoon baking powder
Frosting
3 ounces of cream cheese, soft
3 tablespoons of butter
½ teaspoon of vanilla
1/8 teaspoon of red food coloring
1 ¾ cups powder sugar
Sprinkles
Brownie Instructions
1. Heat oven to 350 degrees. Grease and flour an 8-inch square pan.
2. In a large sauce pan melt butter, and then remove from heat. Stir in sugar, eggs and vanilla. Mix in cocoa powder, flour, salt and baking powder.
3. Spread mixture into greased and floured pan.
4. Bake for 25-30 minutes. Test with a toothpick for doneness.
5. Do not overcook. Toothpick should be batter or mixture free when
done.
6. Once cooled, decorate with frosting and sprinkles.
Frosting Instructions
1. Beat cream cheese, butter, vanilla and food coloring until smooth.
2. Add sugar gradually.
3. Beat until fluffy.
