Kebab
Pieces of fish, meat, vegetable or any other food roasted on a skewer or spit. The main ingredient is meat usually but can be expanded to fish and vegetables depending on their diet.

A paste made from ground, hulled sesame seeds. Tahini is served as a dip on its own or as a major component of hummus, baba ghanoush and halva.

An eggplant or tomato-based dish that has many local and regional variations. It is usually eaten cold in Egypt but other countries choose to eat it hot, like Greece.
Dolma
It usually has a certain mixture that is made of rice, tomato sauce, and little chops of onions and parsley as a stuffing. It is stuffed into grape leaves. Dolma in Egypt, unlike other countries, is very small, that you could eat two in one bite. It can also be stuffed in tomatoes, eggplants, or zuchinnis.

Dukkah
Dukkah is a spice mixture that is put on pita bread that has been basted with olive oil. You can use it on meats, rice, and vegetables.
Cumin
Cumin is a very strong spice that is to be used sparingly. It is tangy and spicy.
Saffron
Saffron has a mild, spicy taste that is smooth. It is very expensive because of the amount of flowers it takes to extract enough for an ounce. About 3000 Saffron flowers make one ounce.
Tumeric
Slightly bitter and with a medium strength, comes from Asia and is used in Egypt for some foods.
Yansoun (Aniseed)
Aniseed has a sweet taste, kind of like licorice. Interestly, it is used in many types of licorice today.
