At The Grange

Chef Odette Sprenger is a professional chef who lives in The Meadows. She has over 45 years of experience cooking Belgian and French cuisine, has worked for celebrities in California and she has even owned and operated her own bistro for 19 years with her husband Herman. Chef Odette teaches monthly classes at The Grange in which she demonstrates how to create a gourmet meal, gives you the recipe and you get to enjoy eating the meal at the end. With small class sizes and a different menu prepared each time, there is much to be learned and fun to be had.

Monthly Menus

December Menu

December will be all about hors d'oeuvres! In this class, Odette will demonstrate various hors d'oeuvres that can be used for a special holiday party. Learn how to make seven different hors d'oeuvres and of course dessert! 1. Figs marinated in red wine filled with blue cheese. 2. Grilled beef tenderloin on a crostini with a salsa verde. 3. Mushrooms filled with cream spinach topped with parmesan crumb or goat cheese. 4. Beignets filled with artichoke, cheese and tomato. 5. Italian shrimp skewers topped with parmesan crumb served with a light tomato dip. 6. Ginger cilantro chicken patty served with lime mayo. 7. Crab Cakes. 8. The dessert will be a variety of chocolate mousse, lemon and raspberry tartlets.

January Menu

The January menu will feature stuffed cabbage rolls cooked in white wine, tomato, and chicken broth filled with ground pork and turkey. The dessert will be an Alsatian apple tart.
