Big thanks to our friends at McMaster Farms for providing corn by the baker's dozen

~~~ RECIPES & TIPS ~~~
Dried Herbs
Getting the most from dried herbs:
In a recipe, 1 tsp dried herbs equals 1 tbsp fresh.
To release flavour, dried herbs are best rehydrated. Add either at the beginning of cooking, or about 20 minutes before the end. Try mixing herbs with 1 tsp of oil and leaving for 10-15 minutes before using in dressings, marinages or sauces. Instead of sprinkling dried oregano on a pizza, steep in a little oil and use as a drizzle.
Dried herbs are a useful way to cut down on salt. When possible, add during cooking rather than sprinkling on top.
Some of our herbs would make a terrific sachet to add some scent to a closet, drawer, or bathroom. One of our subscribers dried their lavender, sage, and mint from GG, popped them into a pretty tulle bag, and voilà! A perfect way to hang on to the scents of summer!
Sweet Corn
According to the Agriculture Marketing Research Association, sweet corn belongs to the same species as field corn but has a genetic mutation (or mutations) that results in the corn kernels storing more sugar than commonly grown field corn. Varieties with this mutation were first discovered and grown in Pennsylvania in the mid-1700s. North Carolina State University reports that the cultivation of sweet occurred when the Iroquois tribes grew the first recorded sweet corn (called 'Papoon') for European settlers in 1779. To capture maximum sweetness, sweet corn is harvested before it fully matures while sugar content is still high.
Microgreens
It’s a good idea to wash your microgreens before eating them, just like any vegetable. But microgreens can bruise easily, so they need to be handled with care. Just lightly rinse them in cold water and then gently run them through a salad spinner or carfeully pat dry. It’s best to wash them right before use, not before you store them in the refrigerator, otherwise they may have excess moisture and deteriorate more quickly.
Radishes
Fresh Basil Pesto
Homemade Basil Pesto
2.5 cups fresh basil
1/3 cups parmesan cheese
1/4 cups olive oil
1-2 cloves of garlic, minced
Directions:
1. Rinse basil and remove stems.
2. Add all ingredients except olive oil into a food processor.
3. Blend ingredients in food processor while slowly pouring in the olive oil.
Tips:
This should be enough pesto for 1/2lb. of pasta, about four 1 cup servings
of cooked pasta. If you want to serve pesto pasta as a main dish,
cooked chicken or shrimp tossed in makes a tasty meal.
