James Walt joins Stratford Chefs School as Celebrity Chef in Residence

In partnership with RBC Foundation, the Stratford Chefs School is proud to announce James Walt (Class of ’91) of Araxi Restaurant (Whistler, BC) as one of this year’s Celebrity Chefs in Residence.
“One of the country’s leading chefs, cookbook author and ‘farm-to-table’ pioneer James Walt continues to inspire his guests, creating compelling regional cuisine based on local, sustainable ingredients. A graduate of the Stratford Chefs School, his impressive culinary career spans across several of British Columbia’s leading restaurants including a four-year tenure at Sooke Harbour House and as opening chef to sister restaurant Blue Water Cafe in Vancouver. James was also Executive Chef to the Canadian Embassy in Rome, Italy; an experience that helped shape the way he cooks today.” (araxi.com/about | accessed January 3, 2017).
Chef Walt will be in residence at the Stratford Chefs School from January 24th to 28th, 2017.
During his time at the Stratford Chefs School, Chef Walt will be instructing, overseeing, and cooking in level two student dinner labs, bringing Araxi and Whistler influences to Stratford. Chef Walt’s most recently published cookbook “Roots to Shoots; Farm Fresh Recipes” will be available for purchase and signing.
Established as a private, non-profit institution, the Stratford Chefs School is now one of Canada’s foremost training facilities. Graduates of the Stratford Chefs School's culinary program are the vanguard of a distinctly Canadian cuisine; they work in some of the finest restaurants in North America.
The School focuses on training young apprentices in all aspects of owning and operating a small restaurant, and is staffed by restaurant professionals – men and women who are currently working in successful restaurants throughout North America. The Stratford Chefs School's unique focus has made it one of three institutions in North America (including the Culinary Institute of America) to be cited as models of excellence in culinary training.
