Beet and Saukraut Salad by Ekatrina
Beet and Sauerkraut Salad
2 medium size potatoes
1 small onion
1 large pickled gherkin
1 large cooked beet
200 g sauerkraut
200 g canned green peas (drained weight)
4 tsp sunflower or vegetable oil
Salt and freshly ground black pepper to taste
1. Cook the potatoes, carrots and beets
2. Cut the potatoes, carrots, beets and pickled gherkin into small cubes and place all the ingredients in a large bowl
3. Add 200 g sauerkraut without liquid
4. Add 200 g canned green peas without liquid
5. Add the onion, finely chopped and add it into the bowl
6. Add the sunflower oil, salt and pepper and mix well.
7. Put the salad in the refrigerator for 2 hours.
Note: Salad can be eaten right after cookin, but if you put it in the refrigerator for 2 hours the taste becomes saturated.

VIET NAMESE PHO
(BEEF NOODLE SOUP)

• 2kg beef knuckle and leg bones that contain marrow.
• 500g eye of round or London broil beef.
• 5 star anises
•1 cinamon stick
•6 cloves garlic
• 1yellow onion
• 1 ginger
• salt, rock sugar
• 1 bag rice or stick noodles (bánh phở)
• green onion, fresh mint , bean sprout.
• Asian chili sauce
• hoisin sauce
Clean the beef knuckle and leg bones, then put into the pot of boiling water and cook about 10 minutes.This gets rid of the impurities and extra fat. After 10 minutes, take the beef bones out of boiling water and wash them with cool water. Boil another pot of water and put the beef bones into boiling water and cook about 2 hours.
Slice the onion and ginger and put under the broiler. Broil until well charred.
Put the star anises, cardamons, cinamon stick into a dry pan over medium heat, stay close and shake the pan a couple of times to make sure they toast. You know when they are ready when you start to smell them. It takes 1-3 minutes.
After 2 hours. Put the broiled onion , ginger and toasted star anises. cardamons, cinamon stick into the beef bones boiling water and cook one more hour. After that put in the rock sugar, salt.and try the soup.
Put the eye round beef into the freezer 15minutes and slice it thinly.
Also boil the rice until it soft and take it out and then wash it with cool water.
Put sliced beef into boiling water until rare or well-done, whatever you like
Cut the green onion into tiny pieces. Take a bowl and put some soft sticky rice, green onion, rare beef or done beef inside the bowl and then put hot soup in it. You can also use beef noodle soup(phở) together with asian hot chili and hoisin sauce. And don't forget the fresh mint and bean sprouts.
Pork and Mushrooms

500g pork meat
50g dried black mushrooms
1 teaspoon salt
1 slice ginger
2 cloves garlic , chopped
2 green onions, chopped
1 tablespoon broad-bean sauce
5ml white wine
25ml sunflower oil
Step 1: First put the dried black mushrooms in the hot water. After one hour wash it
and put it on the side.
Step 2: Cut por meat into small thin slices, add the salt, ginger , white wine together , and put in a bowl for 20 minutes.
Step 3: Put oil in the pan over medium heat, then put garlic, green onions and broad-bean sauce and stir. Add the meat and fry to cook. Then put black mushrooms in the pan with meat. Mix all together and cook for a few minutes. Then serve. Delicious!
