HaPpy MaRdI GrAs
Though most people associate Mardi Gras with New Orleans, Mobile, Alabama, began holding the festival in 1703, 15 years before it started in Louisiana. Based on a French Catholic tradition, the celebration is now a city-wide holiday in Mobile, where even schools close down to celebrate.
Be sure and check out some of the local Baldwin County Parades this weekend! And ENJOY your FOUR DAY WEEKEND!!

Soccer is in full swing at Daphne Middle School!
Boys Soccer Monday: Trojans won in the first half of overtime for a 2-1 victory over Central Baldwin. Carson Williams got the first goal off of a Penalty kick then we got all the way into Overtime and William Wilson scored to game winner!
Girls Soccer Monday: Unfortunately the Trojans lost 0-1. It was a very unfortunate game for the girls sadly the refs had a bad call and gave Central Baldwin a goal and the central baldwin keeper made good games.
Boys Soccer Thursday: The boys sadly lost in penalty kicks after a 70 minute hard fought game but the Trojan boys were the first in the county to hold Fairhope to not scoring at all!
Girls Soccer Thursday: The girls sadly lost 1-2 against Fairhope but it was a hard fought game! Emma Neyhart scored the girls goal off of a Penalty kick.
Advice Column:
Advice: Dear Peyton & Alex…
I would like advice on… procrastination?
To stop procrastinating, try planning out things that you need to do. Write down your homework and the day it’s due in your planner. I still write down my activities in my planner and it helps me know what I have to do and when I have to have it done by.
I would like advice on… maintaining a schedule?
For maintaining a schedule one way you can maintain it is by writing your schedule that fits best with your life and then just follow it. Hang it somewhere that you always look when you get home from school. Then once you see your schedule and follow it for a couple of days it will be already implanted in your head and instead of looking at the paper schedule you will already know what to do without looking at it.
I would like advice on… how to keep my grades up?
To keep your grades up all you have to do is study and make sure you do your assignments 100%. If you slack off and don’t do your homework, or you fail every test, or maybe even you just don’t care or don’t listen then yes, you will fail. But if you really want it then you need to work for it. Try you best even if you are struggling. And even if you are struggling then ask a teacher or adult for help. Or maybe tips on keeping your grades up.
I would like advice on… how do I control my temper and not let people get me mad?
To control your temper and not get mad, try not to get angry about every little thing. I know sometimes that you might get mad if you didn’t get the grade you wanted or you didn’t make the team, but you can’t let it make you so angry. If you feel yourself trying to get angry, try counting to 10 slowly. It’ll take your mind off of what makes you mad and it’ll calm you down.
Congratulations to the Young Voices Festival Participants!

A Dish of Ice Cream
In the days when an ice cream sundae cost much less, a 10 year old boy entered a hotel coffee shop and sat at a table. A waitress put a glass of water in front of him.
“How much is an ice cream sundae?”
“50 cents,” replied the waitress.
The little boy pulled his hand out of his pocket and studied a number of coins in it.
“How much is a dish of plain ice cream?” he inquired. Some people were now waiting for a table and the waitress was a bit impatient.
“35 cents,” she said brusquely.
The little boy again counted the coins. “I’ll have the plain ice cream,” he said.
The waitress brought the ice cream, put the bill on the table and walked away. The boy finished the ice cream, paid the cashier and departed.
When the waitress came back, she began wiping down the table and then swallowed hard at what she saw.
There, placed neatly beside the empty dish, were 15 cents – her tip.
Restaurant of the Week:
Tropical Smoothie Cafe
Tropical Smoothie cafe is a Restaurant that serves a Multitude of smoothies along with some wraps and sandwiches. This place is located right next to mugshots across the street from Sam's Club.
Recipe of the Week:
Chicken Enchiladas
- 2 cloves garlic
Garlic Regular
3 serrano peppers
1 pound small green tomatillos, husks removed
1 cup vegetable oil for frying
9 corn tortillas
3 cups water
4 teaspoons chicken bouillon granules
1/2 store-bought rotisserie chicken, meat removed and shredded
1/4 head iceberg lettuce, shredded
Fresh Express Riviera Salad Blend with Butter Lettuce & Radicchio
1 cup cilantro leaves
1 (8 ounce) container Mexican crema, crema fresca
Daisy Sour Cream Regular
1 cup grated cotija cheese
- Cover a large griddle with aluminum foil and preheat to medium-high.
Cook the garlic, serrano peppers, and tomatillos on the hot griddle until toasted and blackened, turning occasionally, about 5 minutes for the garlic, 10 minutes for the peppers, and 15 minutes for the tomatillos. Remove to a bowl and allow to cool.
Heat oil in a small, deep skillet to 350 degrees F (175 degrees C). Using kitchen tongs, fry the tortillas individually, turning them once. They shouldn't be in the hot oil for more than 5 seconds per side. Remove excess oil with paper towels and keep warm. Remember that the hotter the oil, the less that the tortillas will absorb.
Place the toasted garlic, serrano peppers, tomatillos, and the water in a blender and blend until smooth; pour into a saucepan over medium heat and bring to a boil. Dissolve the chicken bouillon into the mixture, reduce heat to medium-low, and cook at a simmer until slightly thickened, about 10 minutes. The sauce shouldn't be too thick.
Soak three tortillas in the sauce, one at a time, for a few seconds, fill them with shredded chicken, sprinkle the meat with some of the sauce, roll them and place them seam side down on a pasta bowl. Spoon a generous amount of sauce over them and top them with lettuce, cilantro, crema, and cotija cheese. Pour a little more sauce over the whole thing if desired. Repeat the procedure twice more. Serve immediately.
