Mini Pizza's!!!

This kid-favorite gets a healthy makeover to fuel your child's busy body all day long. Make these the night before to save time in the morning. Top English muffin halves with jarred marinara sauce. Add chopped steamed broccoli or spinach by blending them into the sauce. Then put ham, pepperroni, or bacon bit on top based on your child's preference. Sprinkle pre-shredded part-skim mozzarella cheese on top. Bake at 350 degrees for 5 minutes. Then Let cool for a few minutes. Serve with fresh blue berries for fruit.

Turkey Wheels!!!

Spread dollop of store-bought hummus on whole-wheat tortilla, then layer a slice of turkey and some spinach leaves. Roll up and cut. Add a 1/2 cup of cheese cubes, and 1/2 cup of strawberries to complete this meal.

Cornmeal Pancakes!!!

Mix together 1 1/8 cups of cornmeal, 1/3 cup of flour and 3/4 tsp. baking soda.

Add 1 egg, 1 1/8 cups of buttermilk, 1 tsp vanilla, and a shake of cinnamon (optional); stir until just mixed.
Pour by 1/4 cup into a hot pan.
Cook the pancakes until bubbles appear, flip.

Once pancakes are made let cool to a comfortably warm temp then add strawberries on top. Serve with a glass of milk.

Breakfast Burrito's!!!

Heat up a flower tortilla while cooking a scrambled egg in a frying pan.

On the tortilla, spread out the now cooked scrambled egg and veggies like spinach, avacado, tomato's (or others of your choice). Then cover with shredded cheese. Roll it or wrap it up and serve when cheese has melted.

You can cut the wrap in "pinwheels" too if desired.

Add a some fruit of your choice.

Chicken Potato Chowder!!!

Mix 1/3 cup of diced, cooked chicken (you can add bacon as well) , 1/3 or 1/2 cup of veggies(peas, carrots and corn combined), 1/4 cup of cubed, boiled potato's,1/4 cup of milk, and 2 tsp of butter in a small saucepan. Simmer over low heat for 10 minutes. Stir in cheddar cheese. Serve warm with some crackers to dip and go along with the chowder.

Chicken Sticks!!!

Roll thinly cut chicken strips in plain yogurt then coat with crushed cereal of your choice (possibly something corn flake related). Bake on lightly greased baking sheet at 400 degrees for 20 minutes or until done. Serve with a dippin' sauce of your preference, a small bread roll, and a cup of steamed brocoll, green beans, and carrots.

Chicken and Tomato Caserole!!!

Combine 1/2 cup of ketchup,1/8 cup of tomato sauce, 1/2 can of tomatoes and Worcester sauce. Add ground beef,
noodles, peas and carrots, and cheese. Bake for 20 mins at 350 degrees F. Serve warm.

Cheesy Chicken Quesadilla!!!

On a flour tortilla, spread out veggies like corn, tomatoes, and onion, and diced, cooked chicken. Then cover with 2 cheese slices
Bake or broil until cheese has melted
If broiling, watch carefully as cheese may burn quickly!

Stuffed Pita Pockets!!!

Cut off one "top" portion of 1 pita to enable opening and stuffing. Stuff the pita pocket with veggies of your choice, and shredded turkey. Add cheese to you child's liking. Serve with oranges and/or watermelon.

Pork and Squash Stir-Fry

Sauté 1 strip of pork in a separate pan until done. Cut the cooked squash into bite-sized pieces, and shred the pork. Serve the pork and squash over cooked white (or brown for a healthier choice) rice.
