Joanna sent in some great information as well as the pesto recipe below. Being able to
learn from other people's successes is absolutely fantastic! Thanks Joanna!
"Many people are unaware carrot tops are edible. I only found out a few years ago when my carrots failed to grow but my greens were so full, I hated to throw them out! We like to make carrot top pesto, similar to this one. And even the kids love it! The greens are a bit strong, so we cut it with other greens close to 50/50. Radish greens are also edible and an option for a pesto addition from what I read (though we haven't tried it yet)."

Cherry Tomatoes & Basil
Could there be such a thing as too many tomato recipes???
Check these out that also incorporate the lovely basil in this week's share.
Fresh Pasta Puttanesca: I love a kind of fresh puttanesca situation. Skillet with LOTS of olive oil and garlic, olives, capers, anchovies, tomatoes whole or halved, medium heat until they burst and the juices mix with the oil. Some lemon zest at the end. Orange Mint
This mint works best in fresh preparations but can also be used in cooked recipes. Use chopped in fruit or grain salads. Add minced leaves to dressings, vinegars, jellies and sauces. Its flavor is excellent in cream, fruit and chocolate based dessert preparations such as ice cream, crème brule and tarts. Orange mint can be used as a flavor infuser for teas, cocktails and lemonade. Whole leaves may also be used as a garnish for sweet desserts and certain savory dishes. Source: Specialty Produce
Like other fresh herbs, orange mint will have a short shelf life unless you take the right steps to preserve it. Check out the tips for getting the most out of your mint in the first link below.
Brussels Sprouts
The Brussels sprout was introduced to North America by 18th century French settlers in Louisiana. They are thought to be named after Brussels, the capital of Belgium, where they were a popular 16th century crop. In the same family as broccoli, these little sprouts are a good source of vitamin C, A, potassium, calcium, fiber and they also contain some protein. They can be added to a salad, steamed, baked, boiled, air-fried, and more. Brussels Sprouts are often one of those veggies that people either love or hate. If you are in the "hate" camp, perhaps one of these recipes may change your mind! In my house we love to eat sprouts raw, pulling the leaves off one at a time to eat with or without a nice dip.
