What is sucrose?
Sucrose is a natural compound also known as sugar. So, basically if something is sweet it's sucrose. Its molecular formula is C12 H22 O11.
Types of sugar
Sucrose can be extracted from:
-Sugarcane
-Sugar beet
It is difficult to tell the difference of the refined state of the sugar produced from either plant. One way is by isotope analysis of carbon.

Brief history
It is unknown of the first historical mention of the use of sucrose. Some scholars claim Indians discovered how to crystallize sugar during the Gupta dynasty, around 350 AD. Although, it wasn’t until the 19th century it became an everyday necessity. Sugar was sold as a loaf where one would have to nip of a piece and then place into whatever it was needed. Also, it was a very highly traded product, which lead to more inventive ways to process sugar. Today, we normally see it processed as granulated white sugar.
