Salad-oriental chicken

Ingredients
1 chicken breast, cooked, without skin, sliced finely
1/2 cup rice, cold, cooked
2 tablespoons chives or dill, chopped
1/2 cucumber, small, sliced
1/2 capsicum, small, chopped
1 tomato, chopped
1 can 130g corn kernels, drained
1/2 cup rice, cold, cooked

Dressing
1 tablespoon gluten free soy sauce*
1 tablespoon lemon juice
1 teaspoon olive oil
1 tablespoon coriander, chopped
Step 1
First I cut all of the vegetables such as cucumber, tomatoes and capsicum (except the canned corn).
Step 2
Cook the half cup of white rice, the vegetables and the chicken (but you don't cook or fry the canned corn, cucumber or the tomatoes).
Step 3
After you have cooked/fried the vegetables, the rice and the chicken you put them in a plate that is big enough to fit all the food.
My Mums review
I think that my daughter Julia has never cooked something alone before in her life and it was a good experience for her. It was hard watching my daughter cook at this age because her food tasted really nice. Julia's oriental chicken salad had a lot of flavour in it and I enjoyed eating it after she tasted it. Her salad also was very healthy and delicious. The thing that was good about her cooking made her feel very happy.
