Michael's Pictorial Minestrone Soup Recipe
Introduction
I chose this recipe because I love soup and I realized that minestrone soup is very common in Italy. I was curious about why this soup was so popular.

Ingredients and Equipment
4 cups vegetable stock
2 cans stewed tomatoes
1 large potato, cubed
2 carrots, chopped
2 tablespoons Italian seasoning
1 can kidney beans
3 cups corn kernels
1 cup uncooked orzo pasta
Salt and pepper
Method
Step 1: Chop carrots
Step 2: Chop celery.
Step 3: Chop onions.
Step 4: Chop potato.
Step 5: In large stock pot, add vegetable stock.
Step 6: Add undrained tomato to stock pot.
Step 7: Add chopped onions, celery, potatoes and carrots to stock pot.
Step 8: Add Italian seasoning to stock pot.
Step 9: Mix ingredients. Bring soup to a boil.
Step 10: Let soup simmer for about 15 minutes.
Step 11: Add corn.
Step 12: Add pasta.
Step 13: Add kidney beans.
Step 14: Cook until vegetables are tender.
Step 15: Add salt and pepper if needed. Enjoy!

Recipe Reflection
I think that this recipe was very good for someone like myself who does not cook very often. It involved many basic cooking techniques, but was not too easy. A recipe modification that we made was we removed the cabbage and zucchini because some people did not like either, however if I were to make this soup again I would make sure to include both. Besides that, I found that there was very little else to desire with this recipe.
