This is the local dish in Barbados. It is stewed down in gravy with herbs, tomatoes, garlic, butter, and onions. Coucou is similar to cornmeal but cooked with okras, water and butter.

Another popular Bajan dish is salted cod. They are made with flour, herbs and peppers.
Havana Style Eggs
These are baked eggs with olive oil, onions, peppers, and salt. They are best served with bread and chorizo.
Cuban Pork Steak
This is cooked with oranges, peppers, garlic and onions, and is a traditional Cuban meal.
Jerk Chicken
To make jerk chicken, Jamaicans smoke the meat for a long period of time to give it a "jerky" consistency.
Curried Goat
This stew is cooked with goat, curry powder, chilies, peppers, garlic, potatoes, and carrots. It is then cooked over a stove-top similar to soup.

Similar to peppers, garlic is used in a variety of Caribbean dishes for the unique flavor.
