~About my Cookbook~

Ever since i was a little girl, i have shown many different interests in baking. From using my easy bake oven that i got for Christmas that year or helping my mom bake delicious deserts for the family to share. Once i grew older my interests grew with me, and i started baking new things all the time. Since then it has turned into a hobby of mine and i started baking new things all the time. I put together this cookbook of 20 different deserts because i loved making these deserts before and making them again with a different way was a new learning experience for me and i really enjoy making them and eating them! I hope you enjoy them as much as i did!

Brownie Cookies

Ingredients:

  • 3/4 Cups Vegetable Oil
  • 2 Cups White Sugar
  • 2/3 Cups Cocoa Powder
  • 2 Cups all purpose Flower
  • 2 Teaspoons Baking Powder
  • 4 Eggs
  • 2 Teaspoons Vanilla Extract
  • 1/2 Cup Chopped Walnuts
  • 1/4 Cup Confectioner's Sugar


Directions:


  1. In a small mixing bowl mix flour and baking soda
  2. Then mix oil, sugar, and cocoa together in a large mixing bowl. Add eggs to oil and cocoa mixture one egg at a time, beating well after each addition. Stir in vanilla. Mix in flour mixture. Put in nuts if you want to then chill the dough overnight.
  3. Make sure to preheat oven to 350 degrees F. Then make sure to grease cookie sheet.
  4. Roll dough into little cookie dough balls into the confectioners' sugar and put them on the pan
  5. Bake cookies for about 12 to 15 minutes.


Chocolate Chip Cookies

Ingredients


  • 1 cup butter, Softened
  • 1 cup White Sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons Vanilla Extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons hot water
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1 cup chopped walnuts

Directions



  1. Make sure to preheat the over to 350 Degrees F
  2. Next mix the butter, white sugar, and brown sugar until the mix is smooth. Beat in the eggs one at a time, then mix in the vanilla. Next add in the baking soda and the salt. Lastly stir in the flour, chocolate chips, and nuts. Then cups spoon fulls of the mix onto a pan to make the delicious cookies.
  3. Bake for about 10 Minutes in the preheated oven, or until edges are nicely browned.


Melt in your Mouth Sugar Cookies

Ingredients


  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 3 egg yolks
  • 1/2 teaspoon vanilla
  • 1 3/4 cups all-purpose flour

Directions



  1. In a large mixing bowl mix the butter and the shortening with an electric mixer on about medium to high for about 30 seconds. Add sugar, baking soda, cream of tartar, and salt. Mix until everything is combined, make sure to scrap the sides of the bowl occasionally. Mix in egg yolks and vanilla until mixed fully. Beat in as much as flour as you can until the flour is all gone.
  2. Next take the dough and shape into 1-inch balls, and be sure to place then 2 inches apart on a ungreased cookie sheet. Bake in a 300 degree oven for about 15 minutes until sides are a light brown. To be safe put the cookies on a cooling rack before decorating them or eating them.


Blue Berry Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon

Directions

  1. Make sure to preheat the oven to 400 degrees, Grease muffin cups or line with muffin liners
  2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup. Then add the egg and enough milk to fill the cup. Mix this with four, then fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.


Brownies

Ingredients

  • 1/2 cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 cup confectioners sugar

Directions


  1. Make sure to preheat the oven to 350 degrees, and grease and flour an 8 inch square pan
  2. In a large saucepan, melt 1/2 cup butter, Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Mix in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder, Spread batter into prepared pan
  3. Bake in preheated oven for 25 to 30 minutes do not overcook

Dark Chocolate Brownies

Ingredients

  • 1 cup butter or margarine
  • 6 ounces bittersweet chocolate
  • 2 cups sugar
  • 4 large eggs

  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour, divided
  • 1 1/2 cups chopped walnuts
  • 1 cup (6 ounces) semisweet chocolate morsels
  • 1/8 teaspoon salt

Directions

  1. Microwave butter and bittersweet chocolate in a 2-quart glass bowl at HIGH 1 1/2 minutes or until chocolate is melted, stirring mixture twice. Whisk in 2 cups sugar, eggs, and vanilla extract.
  2. Toss together 1 tablespoon flour, walnuts, and chocolate morsels.
  3. Stir remaining flour and salt into sugar mixture. Add walnut mixture. Spread batter into a lightly greased 13- x 9-inch pan.
  4. Bake at 350° for 30 to 40 minutes. Make sure to cool on a wire rack.

Chocolate Cake

Ingredients

  • 3/4 cup butter, softened
  • 3 eggs
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 3/4 baking powder
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1 1/2 cups milk

Directions

  1. Preheat the oven to 350 degrees f
  2. Mix in a large mixing bowl the flour, unsweetened cocoa powder, baking soda, baking powder, salt, sugar. In another mixing bowl mix the butter, eggs, vanilla and milk. When done combine them both until you have a smooth mixture (use a electric mixture for all)
  3. Grease 8-inch pans and 13x9x2-inch pan, cook to 35 to 40 minutes.
  4. when done cooking stack the two cake pieces and be sure to frost them

Peanut Butter Cookies

Ingredients

  • 1 cup unsalted butter
  • 1 cup crunchy peanut butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda

Directions

  1. First mix together butter, peanut butter and sugars, after this step beat in the eggs
  2. In a separate bowl, mix together flour, baking powder, baking soda, and salt. When this is done stir it into the batter and refrigerate for 1 hour
  3. Lastly roll the dough into 1 inch balls and put on baking pans. You can flatten each ball with a fork, making a criss-cross pattern if you want, this is option but usual.
  4. Bake in an oven preheated to 375 degrees F for about 10 minutes of until the bookies have become a brownish color try not to over cook them!

Cup Cakes

Ingredients

  • 1 3/4 cups cake flour
  • 1 1/4 cups unbleached all purpose flour
  • 2 cups sugar
  • 1 tablespoon baking powderiella
  • 3/4 teaspoon salt
  • 2 sticks unsalted butter, cut into cubes
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract

Directions

  1. Preheat the oven to 325 degrees f, line cupcake pans with paper liners
  2. In a bowl mix both flours, sugars, sold and baking powder. Mix on a low speed until combined for around three minutes, next add in cubed butter, mix this in until it coats the flour
  3. Then ad the eggs one at a time until mixed in fully, slowly add the milk and vanilla to batter until completely mixed in, be sure to scrap the bowls for any mix you may of missed
  4. Lastly scoop batter into the cupcake pans making it fill about 2/3 to the top, bake for about 15 mintues

Snicker Doodle Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons white sugar
  • 2 teaspoons ground cinnamon

Directions

  1. Preheat the oven to 400 degrees f
  2. Mix together the butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Then blend in the flour, cream of tartar, soda and salt. Then make the dough into balls using a spoon.
  3. Mix the 2 tablespoons sugar and the cinnamon, then roll the dough balls into this mixture all over the dough
  4. Make sure each ball is 2 inches apart on the ungreased baking sheet, and bake for about ten minutes

Tie Dye Cookies

Ingredients

  • 1/2 cup butter
  • 3/4 cup sugar
  • 3 tablespoons milk or water
  • 1 teaspoon vanilla
  • 1 egg yolk
  • 1 1/2 cups unbleached white flour
  • 1 1/2 teaspoons baking powder
  • Gel-type food coloring

Directions

  1. Mix the butter ans sugar until they are smooth
  2. Mix the milk, vanilla, and egg yolk into a bowl and the flour, baking powder in another, when they are both done mix them together
  3. Divide dough into as many pieces as you want different color and put each different section into a bowl. Next mix food coloring into the different sections of dough to whatever colors you want them to be
  4. Next wrap dough into plastic wrap and chill until it feels firm
  5. Next mix all the colors together and cut them into round cookies
  6. Bake at 350 degrees for 5 to 7 minutes

Banana Bread

Ingredients


  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 1/3 cups mashed overripe bananas

Directions



  1. Preheat the oven to 350 degrees f
  2. In a bigger mixing bowl mix together the flour, baking soda and salt. In another mixing bowl mix together butter and brown sugar. Then stir in the eggs and mashed bananas until they are blended. After that bend in the banana mixture into the flour mixture, stir until very well mixed. Then put the batter into a prepared pan for bread
  3. Bake in preheated oven for about 60 to 65 minutes, let bread cook in a pan for about 10 minutes


Oatmeal Raisin Cookies

Ingredients


  • 3/4 cup butter
  • 3/4 cup white sugar
  • 3/4 cup packed light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 3/4 cups rolled oats
  • 1 cup raisins

Directions



  1. Preheat the oven to 375 degrees F
  2. In a large mixing bowl mix the eggs and vanilla, then stir together the flour, baking soda, cinnamon and salt. Then gradually mix into the butter mixture, stir in oats and raisins. Roll do into spoon full sizes and put them on a ungreased cookie sheet
  3. Bake for 8 to 10 minutes in the oven or until the turn golden brown


Baked Apples with raisins

Ingredients

  • 4 large good baking apples such as golden delicious apples
  • 1/4 cup brown sugar
  • 1 teaspoons cinnamon
  • 1/4 cup chopped pecans
  • 1/4 cup currants or chopped raisins
  • 1 Tbs butter
  • 3/4 cup boiling water

Directions

  1. Preheat oven to 375 F, wash apples and remove cores to 1/2 inch of the bottom of the apples. Then dig out the seeds and make holes about 3/4 inch to an inch wide
  2. In a small bowl, combine the sugar, cinnamon, and pecans. Place apples in a 8-inch by 8-inch square baking pan. Stuff each apple with the mixture you made just before this. Top with a dot of butter about 1/4 tablespoon
  3. Add boiling water to the baking pan. Bake for about 30 to 40 minutes, until the apples are tender, but not mushy. Remove from the oven and take the juices from the apples you cooked the apples on and apply several layers to the apples

Chunky Applesauce

Ingredients

  • 8 cups chopped peeled tart apples
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract

Directions

  1. Combine apples, brown sugar and cinnamon, cover and cook on medium-low heat for about 30 to 40 minutes or until apples are tender, stirring occasionally, remove from heat then stir in the vanilla. Mash apples slightly if desired and you can serve warm or cold

Apple Cake

Ingredients

  • 2 eggs
  • 1 cup vegetable oil
  • 2 cups white sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups all- purpose flour
  • 1 teaspoon baking soda
  • 4 cups apples- peeled, cored and diced

Directions

  1. Preheat the oven to 350 degrees F, grease and flour one 9x13 inch cake pan
  2. In a bowl mix eggs and oil with an electric mixer until they are creamy, add the sugar and vanilla and beat well
  3. In another mixing bowl, mix in the flour, salt, baking soda, and ground cinnamon. the batter will be very thick but this is normal. Fold in the apples by hand using a wooden spoon, spread batter into the prepared pan
  4. Bake at 350 degrees F for 45 minutes

Banana Nut Roll

Ingredients

  • 1/2 cup all- purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 8 ounce package cream cheese
  • 1 3 ounce package cream cheese
  • 1/2 cup granulated sugar
  • 1 egg
  • 3 tablespoons milk
  • 4 egg yolks
  • 1/2 teaspoons vanilla
  • 1/3 cup granulated sugar
  • 1 banana, mashed about 1/2 cup
  • 1/2 cup finely chopped walnuts or pecans
  • 4 egg whites
  • 1/2 cup granulated sugar
  • 1 recipe vanilla cream cheese frosting

Directions

  1. Lightly grease a 15x10x1-inch baking pan, then line the bottom of the pan with waxed paper thats greased. In a medium mixing bowl stir together flour, baking powder and baking soda
  2. To make the filling, in another mixing bowl mix the cream cheese and 1/ cup granulated sugar, beat with an electric mixer on medium speed until the mixture is nice and smooth. Then add whole egg and milk, also mix those until they are fully mixed. Spread in the prepared pan
  3. In another mixing bowl beat egg yolks and vanilla on medium speed for about 5 minutes or until thick and lemon colored. Gradually add the 1/3 cup granulated sugar, beat until sugar is dissolved. Stir in banana and nuts
  4. Thoroughly wash the beaters, and in another mixing bowl beat the egg whites on medium speed until soft peaks form, then gradually add 1/2 cup granulated sugar, beating on high speed until stiff peaks form. Fold yolk mixture into egg whites. Sprinkle the flour mixture evenly over egg mixture, then fold in just until blended
  5. Carefully spread the batter evenly over the filling in the pan. Bake in a 375 degree F oven for 15 to 20 minutes or until the top springs back when lightly touched
  6. Immediately loosen cake from sides of pan and turn out onto a towel sprinkled with powdered sugar. Carefully peel off paper. Starting with a short side, roll up cake, using the towel as a guide but not rolling the towel into cake. Cool completely on rack
  7. Spread top with Vanilla Cream Cheese Frosting. If you want you can sprinkle with chocolate-flavored syrup

Jelly Roll

Ingredients

  • 1 cup sifted cake flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoons salt
  • 2 eggs
  • 3/4 cup white sugar
  • 1/2 teaspoons vanilla extract
  • 2 tablespoons 2% milk
  • 1/2 cup confectioners sugar for dusting
  • 1 cup strawberry jam

Direcitons

  1. Preheat the oven to 375 degrees F, Line a 10x15 inch jellyroll pan with parchment paper.
  2. Mix together the flour, baking powder and salt. In another bowl, mix eggs and sugar with an electric mixer until thick and pale, about 5 minutes. Mix in the vanilla and milk. Stir in the dry ingredients gradually. The batter will be thin. Pour into the prepared pan.
  3. Bake for 8 to 10 minutes in the preheated oven, until the center springs back when pressed lightly. Don't over bake, or it may crack.
  4. Generously dust a clean dish towel with confectioners' sugar. Turn the cake out onto the towel, and peel off the parchment paper. Gently roll up the cake using the towel, and let cool for about 10 minutes.
  5. Unroll the cake, and spread an even coating of jam onto the top. Roll the cake back up into a tight spiral, and remove the towel. Dust with confectioners' sugar before serving.

Best Carrot Cake Ever

Ingredients

  • 4 eggs
  • 1 1/4 cups vegetable oil
  • 2 cups white sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 cups grated carrots
  • 1 cup chopped pecans
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups confectioners sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
  3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  4. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.


White Cake

Ingredients

  • 1 cup white sugar
  • 1/2 cup butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
  2. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
  3. Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.
