Penne Mac and Cheese


This is a delicious Italian Mac and Cheese recipe! Its not too difficult to make and it's super cheesy. I chose this recipe because who doesn't love mac and cheese?! When I am at home and my family needs a yummy lunch, this is what we turn to. The following pictures will take you through the process to make this recipe, so you too can create this mouth-watering dish. Have a great time and Enjoy!


Makes 4-5 servings

Ingredients/ Equipment

    • 1 box (16 ounces) penne rigate
    • 3/4 pound sharp cheddar cheese, shredded
    • 1/2 pound Gruyere cheese, shredded
    • 1/2 cup shredded Asiago or Parmesan cheese
    • 3 tablespoons unsalted butter
    • 3 tablespoons all-purpose flour
    • 2 cups milk
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon salt
    • 1/8 teaspoon cayenne pepper

    - 2-quart broiler safe oval baking dish

    - non-stick cooking spray

    - large bowl

    - medium-size sauce pan

    - whisk and spoons

    -measuring cups/ tablespoons

    - oven


    Step 1

    Heat oven to 350 degrees F. Coat a 2-quart broiler-safe oval baking dish with nonstick cooking spray, and put aside.

    Step 2

    Bring a large pot of lightly salted water to boiling.Once water comes to a roaring boil, add the penne pasta.

    Step 3

    Cook the penne pasta for 6 minutes, then drain.

    Step 4

    In a large bowl, toss together the shredded cheddar, Gruyere and Asiago cheeses. Set aside.

    (If you don't want a very rich and cheesy mac and cheese, you can substitute some more milk for some of the Gruyere or Asiago cheese. )

    Step 5

    Meanwhile, melt butter in medium-size saucepan over medium heat. Whisk in flour until smooth and slightly bubbly. In a thin stream, whisk in milk.

    Step 6

    Stir in onion powder, salt and cayenne. bring to a boil over medium-high heat. Reduce heat and simmer 3 minutes.

    Step 7

    Remove the simmering mixture from heat; whisk in 2 and 1/2 cups of the cheese mixture(the cheddar, gruyere and asiago cheeses). In the pot that the penne pasta was cooked in, put the cooked(and drained) penne pasta back into that pot and stir together the penne and the cheese sauce(the mixture that you just added 2 and 1/2 cups of cheese to).

    Step 8

    Pour half into prepared baking dish. Sprinkle with a generous cup of the cheese. Spoon remaining penne into dish and top with remaining cheese.

    Step 9

    Bake at 350 F for 20 minutes. (Make sure you put the dish in the oven only when preheated so it cooks evenly for the right amount of time directed.)

    Step 10

    Increase oven temperature to broil and cook 3 minutes, until top is lightly browned. Cool slightly before serving.


    I hope your hungry, because this is one filling meal! I suggest 4-5 hungry people and some nice cold milk to compliment the dish. I think that this is an absolutely delicious meal, that won't be too costly. If there was one thing I would change it would be the serving size! the original recipe mentioned 3 servings but 4-5 is far more appropriate! Also, it was very helpful for me to read through the entire process before beginning because it is vital to time certain steps of the process properly so it comes out correctly. Once figuring out exactly what had to be done and when, it was simple to follow the directions and create a perfect home-made mac and cheese meal! I hope that you enjoy!!!
